Receta Chicken In A Hay Pot

Ingredientes
- 1 whl chicken cleaned, rinsed
- 4 lb potatoes peeled, quartered
- 2 lb hay Salt to taste Freshly-grnd black pepper to taste
- 2 c. chicken stock
- 3 Tbsp. extra virgin olive oil
- 1 head cabbage sliced
- 4 x garlic cloves
- 1 lrg red onion
- 1 Tbsp. parsley
Direcciones
- Add in hay to the bottom of a pot. Season chicken with salt and pepper and place chicken and potatoes in a mesh strainer/steamer on top of hay. Surround chicken and potatoes on all sides and top with more hay. Add in chicken stock to pot and cook on medium heat. Chicken should be infused with hay flavor after 45 min of cooking.
- Take chicken out of pot and cut into 8 pcs. Heat rondeau and add in oil. When warm, add in chicken. Brown chicken on all sides. Remove chicken and hold aside.
- Add in garlic and red onion and saute/fry till nicely brown. Add in chicken back to rondeau and add potatoes, cabbage and liquid from hay pot. Increase heat to high and cook till potatoes and cabbage are done and sauce has slightly thickened. Season with parsley, salt and pepper and serve.
- This recipe yields 6 servings.
