Receta Chicken Loca

Ingredientes
- 1 pound chicken cuts (any parts)
- 6 pcs big potatoes, cut into diced
- 1 small can 235 grams pineapple chunks
- 2 large carrot, cut into diced
- 1 pack 320 ml sweet style tomato sauce
- 1 white onion, minced
- 4 garlic cloves, minced
- 1 red pepper, diced
- salt and pepper to taste
- 2 tbsp. extra virgin olive oil
- 2 c. water
Direcciones
- Saute/fry garlic, onion and chicken cuts. Let it simmer for 10 mins till chicken is tender. Add in the sliced tomatoes, carrots and pineapple.
- Saute/fry. Add in 2 c. water and let it simmer till vegetables and chicken are tender. Pour in the tomato sauce and wait till the sauce is thick. Put salt, red bell pepper and black pepper to taste.
- Serve with rice.
- Makes 6 servings
