  • 1 lb boneless chicken breast Salsa Shredded Cheddar Cheese Tortillas

  1. Broil the chicken for about 5 min on each side, or possibly till no longer pink inside. Shred or possibly cube the chicken. (I have found my salad shooter works great for this!) Mix sufficient salsa in to the chicken to moisten. Place a spoonful of the chicken/salsa mix on half of the tortilla, top with cheese. Moisten edges of tortilla with a small amount of water, fold over and seal. Bake at 400 F for about 5 min or possibly till tortillas start brown.
  2. Serve with additional salsa, lowfat sour cream, or possibly guacamole for dipping. Goes well with a salad and/or possibly Spanish Rice.
