Receta Chicken Stuffed Potato Skins

Ingredientes
- 1 chicken, cooked, boned & diced Or possibly 2 (6 1/2 ounce.) cans cooked chicken
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 3 lg. baking potatoes (baked)
- 3/4 c. grated Parmesan cheese
- 6 slices Jack cheese
- 1/2 c. lowfat sour cream
- 1/2 c. mayonnaise
- 2 tbsp. minced onion
- 2 tbsp. bread crumbs
Direcciones
- Halve potatoes lengthwise and scoop out centers. In a bowl, mix together chicken, Parmesan cheese, lowfat sour cream, mayonnaise, onion, salt and pepper. Spoon mix into potato shells. Place slice of Jack cheese on top and sprinkle with bread crumbs. Bake at 350 degrees for 30 min. Yield: 4 servings.
