Receta Chicken With Artichokes And Orange Sauce

Ingredientes

  • 1 lb skinless boneless chicken breasts
  • 1 can artichoke hearts (15-16 ounce) packed in water, not oil
  • 1/2 c. minced onion or possibly use frzn pearl onions thawed
  • 3/4 c. orange juice pepper to taste
  • 1 tsp cornstarch
  • 2 tsp water

Direcciones

  1. Lightly brown chicken in non-stick skillet, or possibly use a drop or possibly two of extra virgin olive oil if you prefer. In same skillet, add in onions and artichokes, and pour orange juice over chicken. Cover and simmer for about 15 min.
  2. Uncover, and mix cornstarch and water together, then pour into skillet and fold in. Turn chicken over, and simmer for about 3 more min, till sauce thickenssomewhat. Serve with rice, and pepper to taste (optional).
  3. We really liked this, but thought we might garnish it with a tiny bit of minced red pepper or possibly fresh orange slices for color, if we were serving company.
