%20I%20love%20the%20moistness,%20the%20amount%20of%20sweetness%20(not%20overpowering),%20and%20the%20fact%20that%20it%20is%20wonderfully%20chocolatey%20without%20being%20at%20all%20overwhelming.%20I%20also%20like%20that%20I%20can%20turn%20leftover%20sour%20cream%20into%20something%20so%20yummy%20when%20it%20might%20otherwise%20just%20sprout%20green%20mold%20while%20languishing%20in%20the%20back%20of%20our%20fridge...%3C/p%3E%3Cp%3EAnd%20I%20actually%20made%20the%20cake%20release%20of%20butter%20and%20fine%20bread%20crumbs%20as%20Maida%20instructed%20(though%20I'm%20not%20actually%20convinced%20it%20works%20any%20better%20than%20butter%20and%20flour).%3C/p%3E%3Cp%3EThen%20I%20got%20down%20to%20business...This%20is%20what%20it%20looked%20like.%3C/p%3E%3Cp%3EAbout%20an%20hour%20later,%20two%20pans%20of%20chocolate%20cake%20were%20cooling%20on%20the%20counter%20and%20the%20house%20was%20filled%20with%20the%20smell%20of%20sheer%20happiness.%3C/p%3E%3Cp%3EAfter%20everything%20cooled,%20it%20was%20time%20to%20frost%20those%20suckers.%20Unfortunately,%20I%20failed%20to%20read%20Maida's%20excellent%20instructions%20before%20I%20began%20so%20I%20ended%20up%20having%20to%20flip%20one%20of%20the%20layers%20after%20I'd%20frosted%20it%20already%20(a%20sticky%20situation,%20you%20might%20say)%20but%20I%20had%20enough%20frosting%20to%20make%20it%20all%20come%20out%20okay%20in%20the%20end.%20And%20now%20I'm%20pretty%20sure%20I'll%20never%20forget%20to%20FLIP%20THE%20BOTTOM%20LAYER%20UPSIDE%20DOWN%20BEFORE%20FROSTING%20IT%20again.%20It's%20brilliant%20advice%20-%20no%20need%20to%20mess%20with%20cutting%20layers%20flat%20or%20any%20of%20that%20crap%20-%20the%20weight%20of%20the%20cake%20on%20top%20presses%20it%20nice%20and%20flat.%3C/p%3E%3Cp%3EI%20decorated%20my%20brown%20beauty%20with%20a%20few%20of%20the%20lovely%20little%20violets%20growing%20in%20our%20yard.%20Then%20there%20was%20nothing%20left%20to%20do%20but%20light%20some%20candles,%20sing%20Happy%20Birthday%20to%20my%20dear%20maman%20and%20devour%20a%20big%20slice%20with%20some%20Ronnybrook%20Farm%20vanilla%20ice%20cream.%3C/p%3E%3Cp%3EMakes%20one%20gorgeous%20cake%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Adjust%20rack%20to%20center%20of%20oven%20and%20preheat%20oven%20to%20375%C2%B0F.%20Butter%20two%209%20inch%20round%20layer%20cake%20pans%20and%20dust%20both%20lightly%20with%20fine,%20dry%20bread%20crumbs%20(though%20I%20think%20flour%20works%20just%20as%20well%20if%20you%20don't%20have%20any%20breadcrumbs%20on%20hand.)%3C/p%3E%3Cp%3E2.%20In%20a%20small%20heavy%20saucepan%20over%20low%20heat%20melt%20the%20chocolate%20with%20the%20boiling%20water.%20Stir%20occasionally%20with%20a%20small%20wire%20whisk%20until%20smooth.%20Set%20aside.%20You%20can%20also%20zap%20these%20things%20together%20in%20the%20microwave%20for%20about%2030%20seconds%20if%20you're%20in%20a%20hurry.%3C/p%3E%3Cp%3E3.%20Meanwhile,%20sift%20together%20the%20flour,%20baking%20powder,%20baking%20soda%20and%20salt.%20Set%20aside.%20In%20large%20bowl%20of%20electric%20mixer,%20cream%20the%20butter.%20Add%20vanilla,%20granulated%20sugar%20and%20brown%20sugar%20and%20beat%20well,%20scraping%20the%20bowl%20with%20a%20rubber%20spatula%20as%20necessary%20to%20keep%20mixture%20smooth.%20Beat%20in%20eggs%20one%20at%20a%20time,%20beating%20well%20after%20each.%3C/p%3E%3Cp%3E4.%20Stir%20sour%20cream%20and%20cooled%20chocolate%20together%20until%20smooth%20and%20add%20to%20batter,%20beating%20only%20until%20mixed.%20On%20lowest%20speed,%20add%20the%20sifted%20ingredients%20continuing%20to%20scrape%20the%20bowl%20with%20a%20rubber%20spatula.%20Beat%20only%20until%20smooth.%3C/p%3E%3Cp%3E5.%20Turn%20into%20prepared%20pans.%20With%20rubber%20spatula%20spread%20tops%20smooth%20and%20then%20run%20the%20batter%20up%20on%20the%20sides%20a%20bit,%20leaving%20the%20batter%20slightly%20lower%20in%20the%20centers.%3C/p%3E%3Cp%3E6.%20Bake%2035%20minutes%20or%20until%20tops%20spring%20back%20when%20lightly%20touched%20and%20layers%20come%20away%20from%20sides%20of%20pans.%20Cool%20in%20pans%20for%20about%205%20minutes.%20Place%20racks%20over%20the%20cakes%20and%20invert.%20Remove%20pans.%20Cover%20with%20racks%20and%20invert%20again%20to%20cool%20right%20side%20up.%3C/p%3E%3Cp%3EFor%20the%20Icing/Frosting%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E*%203%20squares%20(3%20ounces)%20unsweetened%20chocolate)%3C/p%3E%3Cp%3E*%202%20Tablespoons%20butter%3C/p%3E%3Cp%3E*%203/4%20cup%20sour%20cream%3C/p%3E%3Cp%3E*%201%20teaspoon%20vanilla%20extract%3C/p%3E%3Cp%3E*%201/4%20teaspoon%20salt%3C/p%3E%3Cp%3E*%201%20pound%20unsifted%20confectioners%20sugar.%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20In%20top%20of%20small%20double%20boiler%20over%20hot%20water%20on%20low%20heat,%20melt%20butter%20and%20chocolate%20together.%20Stir%20until%20smooth%20and%20let%20cool%20completely.%3C/p%3E%3Cp%3E2.%20In%20small%20bowl%20of%20electric%20mixer%20at%20low%20speed,%20beat%20sour%20cream,%20vanilla%20and%20salt%20just%20to%20mix.%20Gradually%20beat%20in%20the%20sugar,%20scraping%20the%20bowl%20with%20a%20rubber%20spatula.%20When%20smooth,%20add%20cooled%20melted%20chocolate%20and%20beat%20at%20high%20speed%20for%201/2%20a%20minute%20or%20until%20very%20smooth.%3C/p%3E%3Cp%3E3.%20Place%20four%20strips%20of%20wax%20paper%20around%20the%20edges%20of%20a%20cake%20plate%20to%20protect%20it%20while%20icing%20cake.%20(Note,%20this%20is%20one%20step%20I%20skipped%20-%20you%20can%20always%20just%20wipe%20the%20frosting%20off%20the%20plate%20later%20-%20it's%20actually%20rather%20enjoyable...)%3C/p%3E%3Cp%3E4.%20Place%20one%20layer%20upside%20down.%20Spread%20with%20filling.%20Cover%20with%20second%20layer,%20right%20side%20up%20so%20that%20both%20bottom%20sides%20meet%20in%20the%20middle%20(brilliant,%20Maida!!!)%20Cover%20the%20sides%20and%20then%20the%20top%20with%20remaining%20filling%20and%20icing,%20smoothing%20it%20with%20a%20long,%20narrow,%20metal%20spatula;%20then%20if%20you%20wish%20use%20the%20pack%20of%20a%20teaspoon%20to%20form%20swirls%20and%20peaks%20all%20over%20the%20sides%20and%20the%20top.%3C/p%3E%3Cp%3E5.%20If%20you%20did%20the%20wax%20paper%20bit%20in%20step%203,%20remove%20the%20wax%20paper%20by%20pulling%20each%20strip%20by%20a%20narrow%20end.%3C/p%3E%3Cp%3ENeedless%20to%20say,%20this%20goes%20well%20with%20ice%20cream!%20I'd%20say%20vanilla,%20coffee%20or%20hazelnut%20are%20all%20good%20bets.%3C/p%3E){kind=link}
