Receta Chow-Chow Relish

A gleaming bowl of chow-chow ready to serve as a side to meats, beans or rice.

The ingredients. I prefer to chop/dice/mince veggies, but you can also grind, grate or food process to save chopping time.
Sprinkle salt over vegetables in stainless steel pan or bowl. Stir and allow to stand 1-2 hours........
......after standing the vegetables will shrink down somewhat.
Drain in a cheese-cloth lined colander (do not rinse)
Put up now, and enjoy all year long!
No ketchup or mustard needed here! OMGosh - how delicious!
