Ingredientes
- 1/2 bn parsley
- 1 bn cilantro
- 1 c. extra virgin olive oil
- 6 x garlic cloves minced
- 1 c. toasted pumpkinseeds grnd
- 1/2 c. small-diced Mancego
- 1 x lime juiced Salt to taste
- 3 x air-dry chorizo links sliced 3/4" thick
- 3 x four-inch bamboo skewers soaked in water
Direcciones
- In a food processor, puree the parsley and cilantro with the extra virgin olive oil. Add in the garlic, pumpkinseeds, and cheese and pulse. Season with lime juice and salt. Set aside.
- Skewer 3 slices of chorizo lengthwise. Grill the anticuchos (chorizo skewers) till heated through, for approximately 1 minute on each side. Serve with the cilantro pesto.
