  • 1/2 bn parsley
  • 1 bn cilantro
  • 1 c. extra virgin olive oil
  • 6 x garlic cloves minced
  • 1 c. toasted pumpkinseeds grnd
  • 1/2 c. small-diced Mancego
  • 1 x lime juiced Salt to taste
  • 3 x air-dry chorizo links sliced 3/4" thick
  • 3 x four-inch bamboo skewers soaked in water

Direcciones

  1. In a food processor, puree the parsley and cilantro with the extra virgin olive oil. Add in the garlic, pumpkinseeds, and cheese and pulse. Season with lime juice and salt. Set aside.
  2. Skewer 3 slices of chorizo lengthwise. Grill the anticuchos (chorizo skewers) till heated through, for approximately 1 minute on each side. Serve with the cilantro pesto.
  3. This recipe yields 6 servings.
