,%20watching%20movies,%20hanging%20out%20with%20the%20pup,%20and%20trying%20to%20pull%20myself%20out%20of%20the%20lingering%20end-of-semester%20and%20holiday%20coma%20-%20too%20much%20food,%20too%20many%20people,%20too%20much%20laziness%20for%20too%20long.As%20it%20is,%20I%20haven't%20been%20lazy%20about%20cooking,%20as%20such,%20but%20I%20have%20been%20exceedingly%20lazy%20about%20recording%20what%20I've%20cooked,%20how%20I've%20cooked%20it,%20and%20what%20it%20looked%20like.%20In%20the%20effort%20to%20shake%20off%20work-related%20laziness%20and%20get%20back%20in%20the%20swing%20of%20things,%20here%20we%20go.%3C/p%3E%3Cp%3EWe%20had%20my%20dear%20friend%20Liz%20(home%20from%20school%20for%20a%20break)%20and%20her%20other%20half,%20Mike,%20over%20last%20weekend%20and%20I%20got%20all%20excited%20about%20showing%20off%20some%20wild%20cooking.%20I%20settled%20on%20a%20menu%20of%20salt-crusted%20Bronzini%20(that's%20a%20story%20for%20another%20day),%20roasted%20veggies%20with%20a%20sweet%20and%20spicy%20glaze,%20and%20Chinese%20dumplings%20as%20a%20starter.%20As%20soon%20as%20I%20saw%20the%20recipe%20for%20these%20dumplings%20in%20my%20latest%20issue%20of%20Fine%20Cooking,%20I%20knew%20I%20had%20(HAD)%20to%20try%20them.%3C/p%3E%3Cp%3EThe%20dough%20didn't%20come%20together%20*exactly*%20like%20the%20recipe%20said%20it%20would%20(in%20fact,%20it%20was%20a%20mess,%20but%20that%20could%20be%20due%20to%20my%20poor%20effort%20at%20precision),%20but%20it%20worked%20in%20the%20end.%20I%20started%20with%20the%20mound/well%20of%20flour%20and%20discovered%20that%20not%20only%20was%20it%20a%20little%20difficult,%20but%20I%20didn't%20have%20enough%20water.%20I%20put%20the%20flaky%20badness%20in%20a%20bowl%20and%20very%20aggressively%20forced%20some%20more%20water%20into%20the%20dough.%20After%20some%20frustrated%20kneading%20and%20letting%20the%20dough%20rest%20for%20the%20prescribed%20thirty%20minutes,%20I%20was%20pleased%20to%20see%20that%20it%20looked%20more%20or%20less%20like%20it%20was%20supposed%20to.%20The%20cutting%20and%20rolling%20of%20the%20dough%20went%20surprisingly%20well%20and%20proved%20to%20be%20a%20lot%20of%20fun%20with%20all%20four%20of%20us%20pitching%20in%20(even%20the%20boys,%20who%20aren't%20especially%20enthusiastic%20about%20kitchen%20matters,%20but%20who%20ended%20up%20up%20to%20their%20elbows%20in%20flour%20just%20like%20me).The%20filling%20I%20came%20up%20with%20was%20an%20amalgamation%20of%20the%20suggested%20fillings%20from%20the%20magazine.%20A%20little%20of%20this,%20a%20little%20of%20that,%20and%20the%20result%20was%20a%20tangy,%20hearty,%20delicious%20lump%20of%20joy%20wrapped%20up%20in%20tender,%20elastic%20dough.%20Combined%20with%20the%20soy%20dipping%20sauce%20recommended%20by%20the%20magazine,%20this%20was%20one%20of%20the%20most%20satisfying%20recipes%20I've%20ever%20tried.%3C/p%3E%3Cp%3EThe%20dough%20recipe%20is%20here%20and%20there%20are%20also%20videos%20showing%20how%20it's%20done.%20We%20followed%20the%20instructions%20for%20pan%20frying%20the%20dumplings,%20which%20was%20delicious.%20Highly%20recommend.%20Here's%20my%20filling%20recipe:%3C/p%3E%3Cp%3ECombine%202%20T%20water%20and%20the%20sugar%20to%20a%20boil%20in%20a%20skillet%20over%20high%20heat.%20Add%20the%20spinach%20and%20cook%20until%20wilted%20(about%20a%20minute).%20When%20the%20spinach%20is%20cool,%20squeeze%20the%20excess%20liquid%20from%20the%20leaves%20and%20chop%20finely.%3C/p%3E%3Cp%3EMix%20the%20pork%20with%20the%20garlic,%20Mirin%20(or%20Shoaxing),%20ginger,%20soy%20sauce,%20sesame%20oil,%20and%20pepper.%3C/p%3E%3Cp%3EAdd%20mushrooms%20and%20spinach%20to%20pork%20mixture%20and%20combine%20well.%3C/p%3E%3Cp%3EChill%20filling%20mixture%20in%20the%20fridge%20for%20at%20least%2030%20minutes.%3C/p%3E%3Cp%3EIn%20my%20effort%20to%20Cook%20once%20and%20Eat%20twice,%20I%20used%20the%20cup%20or%20so%20of%20leftover%20dumpling%20filling%20to%20make%20a%20delicious%20pork%20fried%20rice%20(a%20rather%20brilliant%20suggestion%20from%20Liz).%20Here's%20a%20recipe.%3C/p%3E%3Cp%3EPork%20Dumpling%20Fried%20Rice%3C/p%3E%3Cp%3E1%20c%20cold%20rice,%20preferably%20cooked%20the%20day%20before%20(I%20use%20brown)%3C/p%3E%3Cp%3E1%20c%20leftover%20pork%20and%20shiitake%20dumpling%20filling%3C/p%3E%3Cp%3E2%20scallions,%20finely%20chopped%3C/p%3E%3Cp%3E1%20carrot,%20quartered%20lengthwise%20and%20sliced%3C/p%3E%3Cp%3E1%20green%20pepper,%20roughly%20chopped%3C/p%3E%3Cp%3E1%20white%20onion,%20chopped%3C/p%3E%3Cp%3E1%20egg,%20beaten%3C/p%3E%3Cp%3Eleftover%20soy-scallion%20dipping%20sauce%20(or%20plain%20soy%20sauce%20to%20taste)%3C/p%3E%3Cp%3EIn%20a%20hot%20wok%20or%20large%20pan,%20heat%20vegetable%20oil,%20then%20saute%20pork%20dumpling%20filling%20until%20no%20longer%20pink.%3C/p%3E%3Cp%3EAdd%20onion,%20pepper,%20carrot,%20and%20scallions%20to%20pork%20filling,%20saute%20until%20vegetables%20begin%20to%20brown.%3C/p%3E%3Cp%3EAdd%20rice%20and%20saute%20all%20ingredients%20until%20everything%20browns%20and%20begins%20to%20crisp.%3C/p%3E%3Cp%3EMake%20a%20well%20in%20the%20middle%20of%20the%20pan%20and%20add%20the%20beaten%20egg%20to%20the%20middle%20of%20the%20pan.%20Stir%20as%20it%20begins%20to%20scramble.%20Before%20it%20sets%20completely,%20stir%20into%20the%20rice.%20Cook%20until%20egg%20is%20completely%20cooked%20through%20and%20begins%20to%20brown.%3C/p%3E%3Cp%3EJust%20before%20serving,%20add%20the%20soy-scallion%20sauce%20to%20taste.%20Thoroughly%20incorporate,%20stirring%20constantly%20to%20avoid%20burning.%3C/p%3E){kind=link}
