- 1 cup shredded reduced fat Cheddar cheese

- 2 small limes, zested and juiced
- 3 TBS reduced fat peanut butter (I used Natural PB)
- 3 TBS reduced sodium soy sauce
- 1â piece of fresh ginger, peeled and chopped
- 2 garlic cloves, chopped
- Non stick cooking spray
- 4 pcs. of 6 oz boneless wild caught salmon (skin on)
- Carrot Ginger Dressing Makes 1/2 cup DELICIOUS! We had this with a basic spinach salad.

- Non stick cooking spray
- 3 lg. apples, peeled, cored, thin sliced
- 1/2 cup raisins
- 1/4 cup prunes, chopped
- 1 small orange, zested and juiced
- 2 TBS brown sugar
- 2 TBS whole wheat flour
- 1 tsp ground cinnamon
- 1/4 cup water
- 1 TBS butter
