Receta Couscous Caprese

Ingredientes
- 2 c. diced Roma tomatoes
- 1 c. diced fresh mozzarella cheese
- 3 Tbsp. chopped shallots
- 1 Tbsp. extra virgin extra virgin olive oil
- 3/4 tsp balsamic vinegar
- 1 x garlic clove chopped
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 c. uncooked couscous
- 1 1/4 c. water
- 1/2 c. minced fresh basil Basil leaves for garnish
Direcciones
- Combine tomatoes through pepper in a large bowl and marinate in refrigerator for 30 min, covered.
- Boil water and stir in couscous. Remove from heat and let stand for 5 min, covered.
- Fluff couscous with a fork and cold to room temperature. Add in couscous and fresh minced basil to the tomato mix. Toss well.
- Garnish with basil sprigs.
- Yield: 5 c.
