Receta Couscous With Asparagus And Mandarin Oranges

Ingredientes
- 1 c. orange juice
- 1 c. water
- 2 tsp extra virgin olive oil
- 1 tsp salt
- 2 tsp ginger root grated
- 1 c. couscous
- 18 stalk asparagus cut in 1" pcs
- 1 x red bell pepper diced
- 1/2 c. frzn peas
- 15 ounce mandarin oranges liquid removed
- 4 x scallions chopped
- 1/2 tsp cayenne pepper
- 1/4 c. walnuts toasted
Direcciones
- In nonreactive saucepan, combine orange juice, water, extra virgin olive oil, salt and ginger and boil over high heat. Place couscous in a large nonreactive bowl and pour in orange juice mix. Cover tightly and let stand about 20 min.
- Saute/fry asparagus in small amount of liquid 2 min; add in red pepper and peas and saute/fry one additional minute. Add in to the couscous along with the scallions, oranges, cayenne and nuts; combine well. Serve hot or possibly at room temperature.
- Serving Ideas : Add in tofu,cooked shrimp or possibly chicken if you like.
