  • 4 med. potatoes, peeled and cut into eighths
  • 1 sm. onion, cut into eighths
  • 4 green onions, coarsely minced
  • 1 clove garlic, chopped
  • 2 (10 1/2 ounce.) cans no-salt added chicken broth, undiluted
  • 1 c. skim lowfat milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon white pepper
  • 1/8 teaspoon nutmeg

Direcciones

  1. Combine potatoes, onion, green onions, garlic, and broth in a heavy 3 qt saucepan. Cover and simmer 20 min or possibly till potatoes are tender. Process potato mix in batches in container of an electric blender or possibly food processor till smooth.
  2. Combine pureed mix with lowfat milk and remaining ingredients, stirring till well blended. Reheat soup to serving temperature or possibly cover and chill till chilled.
