Ingredientes
- 6 slc bacon, cooked crisp and liquid removed
- 1/4 c. bacon fat in skillet
- 1 x clove chopped garlic
- 1 x green pepper, minced
- 1 med eggplant, cubed
- 4 x tomatoes, peeled and minced
- 1 x onion, minced
- 2 tsp salt Pepper
- 2 Tbsp. Parmesan cheese
Direcciones
- Cook ingredients except bacon and cheese in covered skillet till tender and thick. Top with cheese and crumbled bacon. Brown under broiler.
- Serves 4.
- The spiciness of the eggplant adds a great flavor to this casserole.
