%20had%20I%20not%20regained%20my%20sense%20of%20restraint.%20I%20compromised,%20settled%20in%20my%20favorite%20chair,%20and%20savored%20a%20slice%20of%20what%20may%20be%20the%20best%20cheese%20cake%20I%20have%20ever%20had.%3C/p%3E%3Cp%3ENow%20don't%20get%20me%20wrong.%20I%20have%20partaken%20of%20some%20wonderful%20cheese%20cakes%20in%20my%20years%20and%20I%20have%20made%20them%20on%20several%20occasions,%20including%20New%20York%20style%20(one%20of%20my%20favorites).%20Maybe%20this%20time%20the%20planets%20and%20stars%20were%20all%20lined%20up%20properly%20and%20I%20had%20a%20stroke%20of%20luck.%20Whatever%20the%20case%20may%20be%20this%20time%20around,%20this%20cheese%20cake%20is%20neither%20the%20dry%20cake%20like%20New%20York%20style%20nor%20the%20gooey,%20wetter%20type.%20Instead,%20it%20is%20more%20like%20a%20high%20end%20velvety%20mousse%20au%20chocolat%20style.%20I%20tweaked%20my%20recipe%20a%20bit%20and%20that%20may%20have%20made%20all%20the%20difference.%3C/p%3E%3Cp%3EThis%20is%20not%20labor%20intensive%20or%20complicated%20to%20make,%20so%20let's%20get%20started.%20You%20definately%20will%20want%20to%20make%20this.%20For%20the%20filling,%20you%20will%20need:%3C/p%3E%3Cp%3EIn%20a%20food%20processor,%20blend%20the%20flour%20and%20sugar%20for%20a%20few%20seconds.%20Next,%20cut%20the%20cube%20of%20butter%20into%208%20pieces%20and%20blend%20in%20one%20at%20a%20time,%20followed%20by%20the%20vanilla,%20Brandy,%20and%20egg%20yolk.%20It%20should%20quickly%20turn%20into%20a%20dough.%20Remove%20from%20processor%20and%20form%20a%20ball.%20Set%20in%20a%20bowl%20and%20refridgerate%20for%2030%20to%2045%20minutes.%20Be%20sure%20to%20cover%20bowl%20with%20a%20paper%20towel.%3C/p%3E%3Cp%3EAbout%2015%20minutes%20before%20removing%20pastry%20dough%20from%20the%20fridge,%20preheat%20your%20oven%20to%20400.%20Now%20remove%20the%20dough%20and%20roll%20out%20a%20tube%20shape%20about%206%20inches%20long.%20Be%20sure%20to%20flour%20your%20cutting%20board%20and%20roller%20well.%20This%20is%20where%20I%20sometimes%20run%20into%20trouble%20with%20the%20pastry%20dough%20sticking%20and%20it%20can%20become%20frustrating.%20You%20probably%20have%20found%20ways%20to%20get%20around%20the%20sticking%20and%20if%20so,%20use%20your%20method.%20Now%20cut%20your%20tube%20of%20pastry%20dough%20into%203%20equal%20parts,%20set%202%20parts%20aside.%20Take%20one%20piece%20and%20roll%20it%20out%20carefully%20to%20make%20a%20circle%20approximately%209%20inches%20in%20diameter.%20Take%20an%208%20or%209%20inch%20springform%20pan%20and%20remove%20the%20bottom.%20Make%20sure%20the%20pan%20is%20at%20least%203%20inches%20deep.%20Carefully%20lay%20the%20rolled%20pastry%20dough%20onto%20the%20springform%20bottom,%20patching%20if%20necessary,%20and%20bake%20for%20about%2012%20minutes%20or%20until%20pastry%20dough%20is%20light%20golden.%20Watch%20it%20carefully%20as%20this%20bakes%20quickly.%20Remove%20from%20oven%20and%20set%20aside%20to%20cool.%20Increase%20oven%20heat%20to%20450.%3C/p%3E%3Cp%3ENow%20you%20will%20make%20the%20filling.%20In%20your%20food%20processor,%20add%20the%20cream%20cheese%20and%20blend%20until%20it's%20smooth.%20Next,%20add%20your%20dry%20ingredients%20a%20little%20at%20a%20time%20while%20blending.%20Once%20the%20dry%20ingredients%20are%20well%20incorporated%20into%20the%20cream%20cheese,%20start%20adding%20the%20eggs%20and%20egg%20yolk%20one%20at%20a%20time.%20Once%20well%20blended,%20add%20the%20Brandy,%20vanilla,%20and%20cream%20and%20continue%20blending%20well.%20At%20the%20final%20stage,%20add%20the%20chocolate%20syrup%20and%20pulse%20the%20processor%20a%20few%20times.%20Set%20mixture%20aside.%3C/p%3E%3Cp%3EThe%20pastry%20bottom%20should%20now%20have%20cooled.%20Spray%20the%20sides%20of%20the%20springform%20pan%20with%20cooking%20spray%20(preferably%20the%20butter%20type)%20and%20reconnect%20the%20pan%20together.%20Take%20the%20two%20remaining%20pieces%20of%20the%20pastry%20dough%20and%20roll%20out%202%20strips%20about%203%20inches%20wide.%20Carefully%20place%20the%20dough%20around%20the%20inside%20wall%20of%20the%20springform%20pan,%20making%20sure%20it%20covers%20the%20sides%20to%20the%20top.%20If%20you%20need%20to,%20go%20ahead%20and%20do%20patchwork%20with%20any%20remaining%20dough.%20Now%20slowly%20add%20the%20filling%20and%20smooth%20out%20so%20it%20is%20even%20all%20the%20way%20across.%20Pat%20the%20pan%20on%20the%20counter%20so%20the%20mixture%20settles%20well.%20The%20mixture%20should%20have%20filled%20the%20pan%20slightly%20over%20half%20way%20up.%3C/p%3E%3Cp%3EPlace%20in%20the%20middle%20of%20the%20oven%20and%20reduce%20temperature%20to%20400%20and%20bake%20for%20about%2012%20minutes.%20Reduce%20temperature%20to%20225%20and%20bake%20for%2055%20minutes.%20When%20done,%20remove%20from%20oven%20and%20set%20on%20board%20to%20cool%20for%20about%2045%20minutes,%20then%20refridgerate%20for%20at%20least%20an%20hour,%20preferably%202%20hours.%20To%20display,%20carefully%20remove%20springform%20ring%20so%20as%20not%20to%20break%20the%20crust%20and%20set%20on%20a%20nice%20large%20white%20plate.%20Slice%20and%20set%20each%20piece%20on%20a%20puddle%20of%20half%20whipped%20cream%20or%20melted%20vanilla%20ice%20cream.%20Enjoy,%20I%20certainly%20did%20!%3C/p%3E){kind=link}
