Receta Deep Fried Yellow Bean Paste (Baa Yir)

Ingredientes
- 4 ounce Dry moong beans soaked in water for 30 min, and liquid removed
- 1 Tbsp. Plain flour
- 2 tsp Red curry paste
- 1 Tbsp. Light soy sauce
- 1 tsp Sugar
- 2 x Kaffir lime leaves rolled into a cigarette & finely sliced into slivers Oil, for deep-frying
- 4 Tbsp. Sugar
- 6 Tbsp. Rice vinegar
- 1/2 tsp Salt
Direcciones
- In a mortar lb. the liquid removed moong beans to create a paste. Add in the other ingredients in turn, stirring well. Pluck a small piece of the paste and form into a ball the size of a walnut. Don't mould too tightly. Deep-fry the balls till golden, drain and serve with the thick sweet sauce below.
- THE SAUCE: Gently heat the three ingredients till the sugar dissolves.
- Allow to cold before serving.
