  1. Heat oven to 350 degrees spray baking sheets with vegetable cooking spray.
  2. In small bowl, soak prunes in 1/2 c. warm water for 10 to 15 min till plump and soft. Place prunes and the soaking liquid into blender, process till smooth. In medium bowl whisk together the prune puree, sugar, yogurt, oil and egg whites. In another bowl mix flour, cocoa, salt, soda and coffee. Using a wooden spoon mix dry ingredients into the wet mix just till blended. Drop by Tbsp. onto baking sheets 1 1/2 inches apart. Bake for 12 to 14 min or possibly till tops spring back when lightly touched. Cold on wire racks.
  3. Prunes are not noticeable here, they carry a deep chocolate flavor.
