%3C/p%3E%3Cp%3EI%20washed%20and%20tore%202%20bunches%20of%20organic%20kale%20that%20I%20bought%20from%20the%20grocery%20store%20across%20the%20street.%3C/p%3E%3Cp%3ERecipe%20in%20hand,%20a%20huge%20mixing%20bowl%20full%20of%20kale,%20and%20we%20are%20ready%20to%20go!%3C/p%3E%3Cp%3EFirst%20thing%20was%20to%20heat%20up%20a%20bit%20of%20olive%20oil%20in%20the%20bottom%20of%20a%20large%20pot.%20Then%20I%20added%20in%20the%20full%20amount%20of%20kale.%3C/p%3E%3Cp%3EI%20tossed%20that%20for%20a%20few%20minutes%20until%20the%20leaves%20were%20bright%20green.%20Then%20the%20recipe%20said%20to%20cover%20and%20let%20it%20go%20for%20about%2015%20minutes,%20stirring%20occasionally.%3C/p%3E%3Cp%3ENext%20was%20to%20push%20the%20kale%20aside%20and%20add%20a%20bit%20more%20olive%20oil%20and%20minced%20garlic%20and%20crushed%20red%20pepper.%3C/p%3E%3Cp%3EI%20didn't%20have%20a%20chance%20to%20mince%20some%20cloves%20of%20garlic%20and%20I%20don't%20have%20crushed%20red%20pepper%20on%20hand.%20So%20I%20used%20garlic%20powder%20and%20a%20bit%20of%20ancho%20chile%20powder.%3C/p%3E%3Cp%3EI%20stirred%20all%20that%20together%20and%20let%20it%20cook%20for%20another%2030%20seconds.%3C/p%3E%3Cp%3EThe%20instructions%20said%20to%20then%20remove%20from%20heat%20and%20stir%20in%20sherry%20vinegar%20(or%20red-wine%20vinegar)%20and%20salt.%3C/p%3E%3Cp%3EAnd%20now%20it%20is%20ready%20to%20go%20alongside%20the%20penne%20pasta%20with%20red%20sauce%20that%20has%20been%20cooking%20while%20the%20kale%20was%20cooking.%3C/p%3E%3Cp%3EThe%20red%20sauce%20had%20a%20can%20of%20tomato%20sauce,%20leftover%20spaghetti%20sauce,%20and%20the%20remaining%20mashed%20butternut%20squash.%3C/p%3E%3Cp%3EThe%20kale%20wasn't%20really%20enjoyed%20by%20anyone,%20myself%20included,%20but%20it%20wasn't%20horrible.%20I'll%20be%20trying%20this%20again%20only%20with%20the%20listed%20ingredients.%20:)%3C/p%3E%3Cp%3EThursday--%20Baked%20Macaroni%20&%20Cheese%20This%20is%20also%20a%20recipe%20I%20found%20in%20the%20Recipe.com%20magazine.%3C/p%3E%3Cp%3EHeat%20oven%20to%20350%20degrees%20F.%20Coat%20a%202-quart%20ceramic%20baking%20dish%20with%20nonstick%20cooking%20spray%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20pot,%20cook%20macaroni%20according%20to%20package%20directions;%20drain.%20Return%20to%20pot;%20stir%20in%20sour%20cream.%20Cover;%20keep%20warm.%3C/p%3E%3Cp%3EMeanwhile,%20for%20sauce,%20in%20a%20large%20saucepan,%20whisk%20milk,%20onion,%20flour,%20mustard,%20salt,%20cayenne%20pepper%20and%20black%20pepper%20until%20smooth.%20Bring%20to%20boiling%20over%20medium%20heat,%20stirring%20constantly,%20until%20mixture%20thickens.%20Remove%20from%20heat;%20stir%20in%20cheddar%20cheese%20until%20melted.%3C/p%3E%3Cp%3EAdd%20cheese%20sauce%20to%20cooked%20macaroni;%20mix%20well.%20Spoon%20into%20baking%20dish.%3C/p%3E%3Cp%3EIn%20a%20small%20bowl,%20combine%20bread%20crumbs,%20Parmesan%20cheese%20and%20olive%20oil.%20Sprinkle%20evenly%20over%20casserole.%3C/p%3E%3Cp%3EBake%20at%20350%20degrees%20F%20for%2020%20to%2025%20minutes,%20or%20until%20edges%20are%20bubbly.%3C/p%3E%3Cp%3EFriday--%20It%20was%20supposed%20to%20be%20Pizza%20and%20a%20Movie%20Night%20but%20we%20took%20the%20girls%20to%20see%20The%20Nutcracker%20ballet.%20:)%20They%20enjoyed%20it.%3C/p%3E%3Cp%3ESaturday--%20On%20the%20menu%20was%20Quiche,%20but%20my%20dad%20and%20sister%20stopped%20by%20and%20for%20our%20Christmas%20and%20dinner%20was%20switched%20out%20with%20Domino's%20pizza.%20Totally%20not%20complaining%20though.%20:)%3C/p%3E%3Cp%3EStay%20tuned%20for%20next%20week!%3C/p%3E){kind=link}
