%3C/p%3E%3Cp%3E10%20days%20ago%20I%20bought%20a%20Dutch%20Oven,%20plain%20cast%20iron,%20because%20I've%20always%20wanted%20to%20Braise%20meat%20in%20a%20long%20cooking%20process%20in%20the%20oven.%20Yes,%20I%20have%20a%20slow%20cooker,%20yes%20I%20have%20a%20pressure%20cooker,%20but%20I'm%20a%20foodie.%20We%20simply%20HAVE%20to%20try%20all%20kinds%20of%20cooking%20methods,%20don't%20we?%3C/p%3E%3Cp%3EAnyway,%20apparently%20when%20you%20bake%20bread%20in%20a%20covered%20dutch%20oven,%20it%20%22steams%22%20inside%20the%20pot%20and%20therefore%20yields%20the%20kind%20of%20crust%20and%20texture%20we%20are%20all%20looking%20for.%20I%20tell%20ya,%20I%20opened%20up%20the%20lid%20halfway%20through,%20and%20was%20stunned%20at%20how%20it%20had%20risen%20and%20how%20delicious%20it%20looked%20and%20smelled.%3C/p%3E%3Cp%3EWell,%20there%20is%20a%20reason%20you%20have%20not%20yet%20seen%20me%20post%20something%20I've%20made%20in%20a%20Dutch%20Oven.%20Because%20I've%20made%20two%20things%20already%20and%20they%20both%20BOMBED!%20%20Miserably%20BOMBED!%3C/p%3E%3Cp%3EI%20first%20tried%20to%20make%20Beef%20Bourguignon%20and%20the%20recipe%20I%20was%20following%20I%20think%20was%20defective%20because%20it%20was%20overcooked,%20and%20although%20the%20meat%20was%20tender%20and%20delicious,%20the%20gravy%20was%20the%20ugliest%20gray%20color%20I've%20ever%20seen.%20Cooked%20out%20all%20the%20color%20and%20the%20essence.%3C/p%3E%3Cp%3ESo,%20not%20to%20be%20deterred,%20I%20decided%20to%20make%20my%20own%20baked%20beans%20from%20scratch.%20It%20smelled%20delicious%20in%20here%20for%20like%20five%20hours%20as%20I%20slow-cooked%20them,%20and%20slow-cooked%20them,%20and%20slow-cooked%20them,%20and%20they%20STILL%20were%20hard.%20(Yes,%20%20I%20soaked%20the%20beans%20overnight)%3C/p%3E%3Cp%3ESo%20I%20threw%20out%20the%20beans%20because%20I%20got%20tired%20of%20messing%20with%20them.%3C/p%3E%3Cp%3ESo%20it's%20Dutch%20Oven%202,%20Merlin%20ZERO.%3C/p%3E%3Cp%3EThen%20I%20remembered%20about%20baking%20bread%20in%20a%20Dutch%20Oven.%20All%20I%20can%20say%20is,%20you%20gotta%20try%20this,%20you%20just%20gotta.%3C/p%3E%3Cp%3EThis%20is%20a%20no-knead%20bread%20recipe%20and%20is%20intended%20to%20be%20a%20kind%20of%20loose,%20easy%20dough,%20with%20a%20lot%20of%20bubbles.%3C/p%3E%3Cp%3EIngredients%20and%20Method:%3C/p%3E%3Cp%3E3%20cups%20bread%20flour%20or%20all-purpose%20flour%20and%20a%20bit%20more%20for%20dusting%20the%20bread%20after%20rising.%3C/p%3E%3Cp%3EDissolve%20the%20yeast%20in%20the%20warm%20water%20in%20a%20bowl%20or%20mixer.%20Add%20the%20flour%20and%20salt%20(in%20that%20order)%20and%20mix%20thoroughly.%20Cover%20the%20bowl%20with%20plastic%20wrap%20and%20let%20rest%20on%20a%20counter%20at%20room%20temperature%20at%20least%20six%20hours%3C/p%3E%3Cp%3Eand%20preferably,%20overnight.%20(This%20allows%20the%20enzymes%20to%20continue%20to%20work%20to%20develop%20a%20nice%20flavor%20to%3C/p%3E%3Cp%3Ethe%20dough)%20%20It'll%20be%20loose%20and%20bubble%20up,%20that's%20ok.%3C/p%3E%3Cp%3EDust%20a%20cutting%20board%20with%20some%20flour%20and%20scrape%20the%20dough%20onto%20it.%20Sprinkle%20a%20bit%20of%20flour%20over%20the%20top%3C/p%3E%3Cp%3Eas%20it%20will%20be%20very%20sticky.%20Don't%20knead,%20just%20fold%20the%20dough%20over%20onto%20itself%20a%20couple%20of%20times,%20and%20shape%3C/p%3E%3Cp%3Einto%20a%20ball.%20If%20the%20dough%20is%20too%20loose,%20just%20knead%20in%201/4%20cup%20of%20flour.%20Repeat%20as%20necessary%20until%20the%20dough%20is%20the%3C/p%3E%3Cp%3Econsistency%20you%20would%20like.%20Shape%20into%20a%20ball%20by%20pulling%20around%20the%20dough%20edges%20and%20folding%20underneath.%20Place%20on%20the%20counter%20on%20a%20piece%20of%20parchment%20paper%20and%20cover%20with%20a%20towel%20and%20let%20rise%20for%20another%201%20to%201%201/2%20hours.%3C/p%3E%3Cp%3EWhen%20you%20are%20ready%20to%20bake%20the%20bread,%20preheat%20the%20dutch%20oven%20in%20the%20oven%20at%20450%20degrees.%20Carefully%20remove%20the%20dutch%20oven,%20take%20off%20the%20top,%20and%20using%20the%20parchment%20paper,%20lift%20up%20the%20dough%20ball%20(towel%20removed,%20of%20course,%20heh%20heh)%20%20and%20gently%20drop%20it%20into%20the%20dutch%20oven.%20Use%20a%20knife%20to%20slash%203%20slits%20in%20the%20dough,%20diagonally.Cover%20and%20place%20back%20in%20oven.%3C/p%3E%3Cp%3EBake%20covered%20for%2020%20minutes,%20then%20remove%20the%20lid%20and%20continue%20baking%20for%2015%20minutes%20until%20dough%20is%20browned.%20Remove%20from%20oven%20and%20cool%20for%20one%20hour%20before%20cutting.%3C/p%3E%3Cp%3EAll%20I%20can%20say%20is....%20%20%20Dutch%20Oven%202,%20Merlin%20ONE!%3C/p%3E){kind=link}
