Receta Easiest Caribbean Baked Fish
This recipe combines my Grandmother's baked fish recipe with the flavours of St. Lucia...My grandmother called this dish Pescado Verde...or 'Green Fish'. Despite the slightly dodgey translation, you will love this super easy but special Caribbean favourite featuring celery, onions, garlic lemon and spices....
Ingredientes
- 4 -6 fish fillets
- 4 tablespoons butter
- 1 large Spanish or red onion, sliced thinly
- 4 banana leaves or 6 x8 inch foil sheets or baking parhment paper.

- butter for lining
- For the Marinade:
- 8 tablespoons Baron's Green Seasoniing. Available through Cuban Cuisine (www.cibancuisine.co.uk)
- 1/4 cup white wine
- 1/4 cup vegetable oil
- 1 tablespoon lemon

Direcciones
- In a large bowl, combine all the ingredients for the marinade and mix well.
- Add the fish fillets, cover, and marinate in the refrigerator for at least an hour.
- Preheat the oven to 185 Celcius. and remove the fish from the marinade.
- Spread 1 tsp. of butter on each banana leaf or foil section.
- Lay a layer of spinach leaves, followed by a narrow row of lemon slices.
- Now lay a fillet on each leaf.
- Top with onion slices and marinade.
- Wrap the fillets, using string to tie the banana leaves, and bake for 30 minutes or until the fish flakes.
