- 1 small onion, finely diced
- 1 pint grape tomatoes (or about 2 cups of any bite-sized tomato), halved
- 1 cup chopped fresh mint
- 1 cup diced cooked chicken (optional)
- 1/3 cup olive oil
- 3 tablespoons lemon juice
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon salt
