%20food%20for%20everybody%20who%20was%20present%20and%20little%20more%20extra%20just%20in%20case,%20I%20always%20get%20tensed%20while%20baking%20cake%20for%20a%20crowd.%20I%20keep%20wondering%20what%20if%20it%E2%80%99s%20not%20sufficient%20and%20bake%20at%20least%202%20cakes%20and%20end%20up%20having%20a%20LOT%20of%20leftovers%20and%20this%20birthday%20party%20was%20no%20different.%3C/p%3E%3Cp%3EI%20was%20not%20sure%20if%20the%20strawberry%20cake%20which%20I%20planned%20to%20bake%20in%20a%2013%C3%979%20inch%20pan%20would%20be%20sufficient%20for%20the%20party%20guests,%20so%20wanted%20to%20bake%20another%20simple%20cake.%20Sheet%20cake%20was%20it.%20I%20felt%20that%20this%20was%20the%20perfect%20opportunity%20to%20try%20out%20the%20pineapple%20sheet%20cake.%3C/p%3E%3Cp%3EGrowing%20up,%20I%20was%20never%20a%20fan%20of%20pineapple.%20It%E2%80%99s%20only%20after%20I%20started%20baking%20that%20I%20started%20developing%20a%20taste%20for%20pineapple.%20I%20have%20tried%20a%20pineapple%20pastry%20cake%20in%20India%20which%20I%20loved%20so%20much%20that%20I%20wanted%20to%20replicate%20it%20and%20that%E2%80%99s%20how%20this%20egg%20less%20pineapple%20pastry%20cake%20was%20born.%20That%20cake%20was%20%E2%80%9Cout-of-this-world%E2%80%9D%20decadent,%20moist%20and%20tasty.%20Since%20then%20I%20have%20become%20a%20pineapple%20fan.%20So%20this%20was%20yet%20another%20reason%20that%20I%20wanted%20to%20bake%20the%20pineapple%20sheet%20cake.%3C/p%3E%3Cp%3EWhen%20I%20first%20saw%20the%20recipe%20I%20was%20surprised%20that%20it%20did%20not%20use%20any%20fat%20(butter,%20oil%20or%20margarine)%20other%20than%20the%20fat%20from%20the%20eggs.%20I%20was%20wondering%20how%20this%20would%20affect%20the%20recipe,%20because%20I%20was%20not%20even%20going%20to%20use%20eggs.%20I%20was%20quite%20hesitant%20to%20try%20it%20and%20was%20on%20the%20fence%20about%20adding%20some%20fat%20to%20the%20recipe,%20but%20took%20a%20leap%20of%20faith%20and%20as%20usual%20used%20my%20winning%20egg%20substitute%20combination:%20plain%20yogurt%20and%20silken%20tofu.%3C/p%3E%3Cp%3ENeedless%20to%20say%20the%20cake%20turned%20out%20awesome.%20Everybody%20loved%20it%20at%20the%20party.%3C/p%3E%3Cp%3EEggless%20Pineapple%20Sheet%20Cake%3C/p%3E%3Cp%3EPrep%20time:%2015%20Mins%3C/p%3E%3Cp%3ECook%20time:%2032%20Mins%3C/p%3E%3Cp%3EYields:%2024%20Slices%3C/p%3E%3Cp%3ELooking%20for%20a%20simple%20yet%20flavorful%20and%20delicious%20cake%20recipe%20to%20feed%20a%20crowd?%20Then%20this%20eggless%20pineapple%20sheet%20cake%20is%20the%20recipe%20to%20try.%3C/p%3E%3Cp%3EPreheat%20oven%20at%20350F/180C%20for%2015%20minutes.%20Grease%20a%20jelly%20roll%20pan%20(15%C3%9710%20inches)%20with%20non-stick%20cooking%20spray%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20large%20bowl%20combine%20together%20all%20the%20cake%20ingredients,%20except%20the%20nuts%20and%20beat%20well.%20Stir%20in%20the%20nuts%20too.%3C/p%3E%3Cp%3ESpread%20the%20batter%20into%20the%20prepared%20pan.%20Bake%20for%20about%2030-35%20minutes.%20I%20took%20out%20mine%20around%20the%2032nd%20minute%20itself.%20I%20saw%20that%20the%20cake%20started%20pulling%20away%20from%20the%20sides%20of%20the%20pan.%3C/p%3E%3Cp%3ELet%20the%20cake%20cool%20in%20the%20pan%20itself%20on%20a%20wire%20rack.%3C/p%3E%3Cp%3EMeanwhile%20prepare%20the%20icing,%20by%20beating%20together%20the%20cream%20cheese,%20butter,%20sugar%20and%20pineapple%20extract;%20until%20nice%20and%20smooth.%20Spread%20over%20the%20cake%20and%20sprinkle%20with%20the%20chopped%20nuts.%3C/p%3E%3Cp%3EI%20would%20suggest%20reducing%20the%20quantity%20of%20sugar%20by%201/4%20cup%20because%20I%20personally%20felt%20that%20the%20cake%20was%20quite%20sweet.%3C/p%3E%3Cp%3E1.2.4%3C/p%3E){kind=link}
