%3C/p%3E%3Cp%3EEggplant%20Parmigiana%3C/p%3E%3Cp%3EI%20have%20given%20you%20a%20list%20because%20it%20all%20depends%20on%20how%20much%20eggplant%20you%20have%20to%20cook%20up.%20I%20generally%20buy%202-3%20large%20ones.%20I%20will%20either%20make%20one%20big%2013%20x%209%20pan%20and%20a%20smaller%20one%20or%20I%20save%20the%20rest%20to%20freeze.%20Then%20next%20time%20I%20don't%20have%20to%20fry%20them%20all%20up%20again%20,%20I%20can%20just%20assemble%20a%20small%20one.%3C/p%3E%3Cp%3EI%20use%20breadcrumbs%20because%20I%20don't%20always%20have%20cracker%20meal%20in%20the%20house.%20My%20MIL%20used%20that%20and%20I%20really%20like%20it%20but%20sometimes%20I%20cant%20find%20it%20up%20here.%20And%20I%20am%20not%20going%20to%20start%20grinding%20crackers%20when%20I%20have%20to%20do%20this.%20It%20takes%20long%20enough!%20I%20have%20two%20bowls%20going%20in%20the%20process,%20one%20that%20holds%20eggs%20beaten%20well%20with%20water%20and%20the%20other%20holding%20the%20breadcrumb%20mix.%20The%20one%20with%20eggs,%20I%20add%20about%20a%20half%20cup%20of%20water%20to%20two%20eggs%20and%20beat%20well.%20You%20want%20a%20thin%20egg%20wash.%20To%20the%20breadcrumb%20mix%20I%20add%20s%20&%20p%20to%20taste%20and%20dried%20oregano.%20I%20would%20say%20to%20about%20two%20c.%20breadcrumbs%20you%20might%20add%202%20tsp.%20oregano.%20I%20will%20say%20that%20depending%20on%20how%20many%20eggplant%20you%20make%20,%20you%20will%20have%20to%20replenish%20this%20mix%20of%20both.%20I%20made%20two%20eggplant%20the%20other%20nite%20and%20had%20to%20make%20the%20mixes%20twice.%3C/p%3E%3Cp%3EPeel%20your%20eggplant.%20Some%20people%20don't%20and%20we%20don't%20like%20it%20but%20if%20you%20do%20then%20leave%20it.%20I%20find%20it%20bitter.%20Slice%20in%20about%201/4%20in.%20thick%20slices.%20In%20a%20frying%20pan%20put%20your%20oil.%20I%20use%20a%20mix%20of%20reg.%20veggie%20oil%20and%20then%20add%20some%20extra%20virgin%20olive%20oil%20for%20flavor.%20These%20are%20generally%20the%20only%20two%20oils%20I%20have%20around%20the%20house%20and%20Xvirgin%20is%20to%20expensive%20to%20fry%20with.%20So%20adding%20a%20few%20TB.%20each%20time%20helps%20flavor%20it.%20Then%20dip%20in%20egg%20wash%20and%20then%20in%20breadcrumbs.%20When%20the%20oil%20is%20hot,%20fry%20them%20till%20golden%20brown.%20It%20doesn't%20matter%20if%20they%20are%20not%20cooked%20thru,%20they%20will%20finish%20baking%20later.%20Drain%20on%20paper%20towels.%3C/p%3E%3Cp%3EYou%20can%20use%20your%20own%20spaghetti%20sauce%20or%20make%20some.%20I%20often%20keep%20Classico%20Tomato%20Basil%20sauce%20around%20because%20it%20tastes%20like%20the%20sauce%20I%20used%20to%20can%20from%20my%20garden.%20Its%20a%20base%20sauce%20and%20you%20can%20add%20other%20things.%20I%20did%20happen%20to%20can%20some%20this%20yr%20so%20I%20used%20my%20own.%20I%20saute%20several%20chopped%20cloves%20of%20garlic%20in%20some%20olive%20oil.%20Then%20I%20add%20the%20sauce%20to%20the%20pan.%20I%20add%20chopped%20parsley%20and%20more%20basil%20and%20S%20&%20P%20to%20that%20and%20let%20it%20cook%20awhile.%20It%20should%20be%20very%20loose%20so%20add%20water%20to%20it.%20It%20will%20thicken%20up%20on%20the%20eggplant%20so%20if%20you%20don't%20make%20it%20loose%20now%20,%20the%20eggplant%20will%20be%20dry.%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20350%20degrees.%20Once%20all%20the%20eggplant%20is%20fried%20and%20the%20sauce%20is%20made%20its%20time%20to%20layer.%20Slice%20your%20mozzarella%20cheese%20thin.%20How%20much%20is%20up%20to%20you.%20For%20the%20two%20lg.%20eggplant%20I%20fried%20I%20used%20a%20two%20lb.%20block%20of%20cheese.%20I%20also%20grate%20fresh%20Romano%20as%20I%20go%20on%20each%20layer%20too%20but%20you%20can%20use%20Parmesan%20if%20you%20want.%3C/p%3E%3Cp%3EFirst%20a%20layer%20of%20sauce%20in%20the%20pan,%20then%20eggplant,%20cheeses%20and%20then%20more%20sauce.%20Continue%20in%20layers%20ending%20with%20sauce%20till%20all%20is%20used%20up%20or%20pan%20is%20full.%20Sometimes%20I%20have%203%20layers,%20last%20nite%20I%20had%20four.%20Just%20don't%20fill%20to%20the%20brim%20cuz%20it%20does%20swell%20and%20will%20spit%20all%20over%20the%20oven.%20Cover%20with%20foil%20and%20bake%20till%20cheese%20is%20melted%20and%20its%20hot%20in%20the%20center%2045%20min.%20-%201hr.%20I%20cut%20this%20into%20squares%20to%20serve.%20Leftovers%20can%20be%20frozen%20and%20reheated.%20I%20often%20make%20a%20big%20casserole%20full%20so%20I%20can%20have%20leftovers.%20Makes%20the%20nights%20I%20don't%20want%20to%20cook%20or%20don't%20have%20time%20to%20cook,%20real%20ez%20then.%20I%20just%20pop%20it%20from%20the%20freezer%20and%20either%20let%20it%20sit%20to%20thaw%20or%20microwave%20it%20a%20bit%20to%20thaw.%20Then%20reheat%20in%20the%20oven.%3C/p%3E%3Cp%3E****%20You%20can%20bake%20the%20breaded%20eggplant%20on%20oiled%20baking%20sheets%20but%20I%20don't%20like%20it.%20I%20find%20the%20oil%20may%20get%20absorbed%20into%20the%20eggplant%20but%20there%22s%20not%20enough%20of%20it%20to%20give%20it%20much%20flavor.%20Just%20seems%20drier%20too.%20Since%20we%20don't%20eat%20it%20very%20often%20and%20since%20I%20don't%20fry%20much,%20I%20make%20it%20the%20traditional%20way.%3C/p%3E){kind=link}
