- 6 x green chilies -- roast, peel, chop
- 1 med white onion -- minced
- 1 tsp salt -- or possibly to taste
- 1 tsp pepper
- 1 tsp vinegar
- 1 tsp oil
- 1 bn cilantro -- minced

- Mash garlic in a wooden salad bowl. Add in remaining ingredients, including cilantro, if you like, and toss. Refrigeratebefore serving.
