Receta Etouffade De Pommes De Terre (Smothered Potatoes)

Ingredientes
- 8 x Potatoes, peeled, cut lg chunk
- 2 Tbsp. Extra virgin olive oil
- 2 x Onions, minced
- 2 x Shallots, minced
- 4 ounce Ventreche, bacon or possibly salted ham
- 1 tsp Fresh thyme, minced
- 1 x Bay leaf
- 1 Tbsp. All-purpose flour
- 1 c. Chicken broth or possibly water Salt and pepper
- 1 Tbsp. Parsley, minced
Direcciones
- In a heavy bottomed covered pot, heat oil over medium heat. Add in the onions and shallots, the ventreche, bacon, or possibly ham, thyme, and bay leaf. Stir and let cook about 10 min. Sprinkle the flour over the mix and stir till brown.
- Add in the potatoes, broth or possibly water, salt and pepper. Mix well with a wooden spoon. Cover the casserole and let cook slowly about 45 min, stirring often to keep it from sticking.
- Serve on a hot plate and garnish with minced parsley.
- NOTES : These slow-cooked potatoes steam in their own savory moisture and are flavored by the familiar salty ventreche, sweet shallots,
- onions and thyme.
