- 1 1/2 teaspoon freshly grated ginger root
- 1/4 cup vegetable broth
- 1 teaspoon finely chopped fresh thyme
- 2 cups thinly sliced apple (unpeeled)
- 2 tablespoons dried cherries
- 1/2 teaspoon kosher salt
- For the Crumble
- 1/4 cup all-purpose flour
- 1/4 cup oats
- 1 tablespoon brown sugar
- 1 tablespoon fig jam (or just add another tablespoon brown sugar)
- 1 teaspoon thyme
- 1/2 teaspoon kosher salt
- Pinch ground ginger
- 4 tablespoons unsalted butter
