%3C/p%3E%3Cp%3ELuckily,%20Kristen%20gives%20us%20some%20leeway.%20The%20challenge%20wasn't%20quite%20so%20hard%20when%20I%20could%20include%20some%20ingredients%20that%20weren't%20so...well,%20so%20fishy.%20I%20do%20love%20fish,%20but%20somehow%20tilapia%20doesn't%20sound%20quite%20right%20in%20a%20cookie.%20The%20chips%20part%20was%20easy%20for%20me.%20Besides%20the%20usual%20chocolate%20chips,%20I%20was%20ready%20to%20give%20some%20roasted%20coconut%20chips%20a%20try.%20Oh%20my.%20They%20are%20good!%3C/p%3E%3Cp%3EFish%20'N%20Chips%20Cookies%3C/p%3E%3Cp%3EPreheat%20oven%20to%20400%20degrees%20F;%20line%20a%20cookie%20sheet%20with%20parchment%20paper%20or%20a%20silpat.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20whisk%20the%20flour,%20salt,%20baking%20powder,%20and%20baking%20soda;%20set%20aside.%3C/p%3E%3Cp%3EPlace%20the%20coconut%20oil%20and%20the%20brown%20sugar%20in%20a%20mixing%20bowl.%20Beat%20until%20light%20and%20fluffy,%20about%202%20minutes.%20Add%20the%20eggs,%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition.%20Stir%20in%20the%20vanilla.%3C/p%3E%3Cp%3EAdd%20the%20flour%20mixture%20into%20the%20sugar%20mixture,%20stirring%20until%20well%20blended.%20Fold%20in%20the%20chocolate%20chips,%20Goldfish,%20and%20coconut%20chips.%3C/p%3E%3Cp%3EUse%20a%20cookie%20scoop%20to%20drop%20the%20dough%20onto%20the%20prepared%20baking%20sheets.%20Bake%20for%209-11%20minutes%20or%20until%20the%20cookies%20are%20just%20golden.%20Remove%20from%20oven%20and%20cool%20on%20wire%20racks.%3C/p%3E%3Cp%3ESo,%20I've%20been%20a%20little%20tired%20and%20forgot%20to%20set%20the%20timer%20on%20this%20batch.%20I%20call%20them%20%22Blackened%20Grouper%22%20cookies.%20They%20actually%20tasted%20really%20good...just%20a%20bit%20crunchy.%3C/p%3E%3Cp%3EEasiest%20fish%20I've%20ever%20prepared....no%20bones%20about%20it.%3C/p%3E%3Cp%3EThese%20cookies%20are%20really,%20really%20good.%20As%20I%20write%20this%20I%20am%20digesting%20the%20three%20that%20I%20had%20for%20dinner.%20They%20are%20just%20the%20right%20amount%20of%20chewy,%20salty,%20crunchy,%20and%20sweet.%20I%20heart%20them.%3C/p%3E%3Cp%3EPlease%20check%20out%20what%20everyone%20else%20is%20making%20with%20Fish%20and%20Chips!%3C/p%3E){kind=link}
