- 24 round crackers (I used Back to Nature because they are smaller)
- ½ cup unsalted butter
- ½ cup brown sugar, packed

- 1 cup melted chocolate, divided
- 1 cup peanut butter (I used Peanut Butter and Co’s White Chocolate PB)
- 1/3 cup powdered sugar
- ¼ cup unsalted butter, at room temperature

%20that%20today%20is%20National%20Peanut%20Butter%20Day.%20So%20I%20rushed%20to%20figure%20out%20what%20to%20make%20(as%20well%20as%20make%20sure%20it%20was%20portable%20to%20take%20to%20the%20hockey%20team%20tonight%20for%20snack).%20I%20have%20a%20serious%E2%80%A6and%20I%20mean%20serious%20weakness%20for%20what%20we%20call%20ghetto%20toffee%20(most%20people%20know%20it%20as%20cracker%20toffee).%20I%20rarely%20make%20it%20because%20I%20really%20can%E2%80%99t%20stop%20eating%20it.%20But%20I%20thought%20why%20not%20make%20it%20into%20a%20peanut%20butter%20cup.%20That%20was%20a%20good%20thought.%3C/p%3E%3Cp%3EIf%20you%20can%E2%80%99t%20find%20the%20Back%20to%20Nature%20crackers%20and%20use%20Ritz%20you%20will%20need%20to%20use%20regular%20muffin%20pans%20(and%20therefore%20will%20need%20two%20muffin%20pans).%20You%20could%20honestly%20stop%20at%20just%20the%20crackers%20and%20be%20good%20but%20of%20course%20going%20to%20the%20extra%20effort%20is%20even%20better.%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EFor%20the%20crackers:%3C/p%3E%3Cp%3ESpray%20a%20mini%20muffin%20pan%20(with%2024%20cups)%20with%20baking%20spray%20(if%20using%20full%20size%20crackers%20use%20two%20regular%20muffin%20tins).%3C/p%3E%3Cp%3EPlace%20a%20cracker%20in%20each%20one.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan%20bring%20butter%20and%20brown%20sugar%20to%20a%20boil.%3C/p%3E%3Cp%3EOnce%20boiling,%20remove%20from%20heat.%3C/p%3E%3Cp%3ECarefully%20divide%20it%20evenly%20on%20top%20of%20the%20crackers.%20A%20spoon%20works%20best%20for%20this.%3C/p%3E%3Cp%3EBake%20at%20350F%20for%208%20minutes.%3C/p%3E%3Cp%3ERemove%20from%20oven%20and%20let%20cool.%20You%20can%20place%20in%20fridge%20to%20speed%20up%20process.%3C/p%3E%3Cp%3EFor%20the%20PB%20cups:%3C/p%3E%3Cp%3EWhile%20crackers%20are%20cooling.%3C/p%3E%3Cp%3EMelt%20%C2%BD%20of%20the%20chocolate%20in%20either%20a%20microwave%20or%20double%20boiler.%3C/p%3E%3Cp%3EPlace%20chocolate%20into%20a%20piping%20bag%20(makes%20it%20way%20easier).%3C/p%3E%3Cp%3ELay%20out%2024%20mini%20muffin%20liners%20(or%20full%20size%20if%20doing%20Ritz).%3C/p%3E%3Cp%3EEvenly%20distribute%20the%20chocolate%20throughout%20the%2024%20liners.%3C/p%3E%3Cp%3EPlace%20the%20cooled%20cracker%20on%20top%20of%20the%20chocolate%20and%20push%20down.%20Repeat%20for%20all%2024%20cups.%3C/p%3E%3Cp%3EPut%20in%20fridge%20while%20you%20make%20the%20peanut%20butter%20filling.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20mix%20together%20the%20peanut%20butter,%20powdered%20sugar,%20and%20butter%20until%20smooth%20and%20all%20the%20ingredients%20are%20fully%20incorporated.%3C/p%3E%3Cp%3ETake%20cups%20out%20of%20fridge%20and%20pipe%20or%20spoon%20peanut%20butter%20mixture%20evenly%20between%20the%2024%20cups.%3C/p%3E%3Cp%3EPut%20back%20in%20fridge.%3C/p%3E%3Cp%3EMelt%20the%20remaining%20%C2%BD%20cup%20of%20chocolate%20chips.%3C/p%3E%3Cp%3ERemove%20cups%20from%20fridge%20and%20pipe%20or%20spoon%20the%20chocolate%20on%20top%20of%20the%20peanut%20butter%20layer.%3C/p%3E%3Cp%3ESmooth%20with%20a%20spoon.%3C/p%3E%3Cp%3ELet%20set%20up%20in%20fridge%20for%20about%2030%20minutes%20and%20enjoy.%3C/p%3E%3Cp%3E3.1%3C/p%3E%3Cp%3E%3C/p%3E%3Cp%3EPin%20It%3C/p%3E){kind=link}
