  • 350 gm easycook or possibly parboiled rice (e.g. uncle bens)
  • 500 ml cool water
  • 1 x salt and freshly grnd black pepper
  • 4 Tbsp. good extra virgin olive oil
  • 2 tsp medium curry pwdr
  • 4 x sweet red onions (225g) thinly sliced
  • 2 clv garlic crushed
  • 2 x aubergines cut into cubes
  • 2 x red peppers seeded and sliced
  • 2 Tbsp. soy sauce
  • 2 Tbsp. minced fresh parsley

Direcciones

  1. Measure the rice water and 1 tsp. salt into a pan bring to the boil on the boiling plate cover then transfer to the floor of the simmering oven for about 15 min till tender and all the liquid is absorbed.
  2. Heat the oil in a generoussized pan add in the curry pwdr onion and garlic and cook on the boiling plate for 2 to 3 min.
  3. Add in the aubergine and red pepper to the pan. soak fbr a further 3 min then cover and transfer to the floor of the simmering oven for 10 min till tender.
  4. Return the pan to the boiling plate and boil off any excess juices.
  5. Stir in the cooked rice and soy sauce and season well.
  6. Scatter with parsley before serving.
  7. This spicy rice mix goes well with chicken and pork sausages or possibly it can be served on its own or possibly as part of a vegetarian meal.
  8. Serves 6
