- 1 1/3 cups Freekeh
- 2 lemons, halved
- 1/4 cup extra-virgin olive oil, plus extra to coat lemons
- 1 bunch flat-leaf parsley leaves, chopped
- 15 oz. (approximately) baby heirloom tomatoes, halved
- 1 Tbsp. red wine vinegar
- Beef & Marinade:
- 2 lbs. boneless sirloin steak
- 2 large yellow onions, cut into wedges
- 1/4 cup fresh lime juice
- 2 1/2 tsp. kosher or sea salt
- 3 Tbsp. Extra-Virgin Olive Oil
- 2 1/2 tsp. fresh ground pepper
