%3C/p%3E%3Cp%3EI%20had%20made%20a%20serious%20mistake%20of%20leaving%20the%20cake%20in%20the%20oven,%20and,%20not%20returning%20to%20check%20on%20it%20until%20I%20spotted%20a%20slight%20burning%20smell%20coming%20from%20my%20kitchen.%20Even%20though%20it%20was%20only%20half-way%20through%20the%20baking%20time,%20the%20top%20was%20almost%20burnt.%20It%20was%20too%20late%20to%20do%20anything,%20the%20only%20thing%20I%20could%20do%20was%20to%20tent%20the%20top%20with%20a%20foil%20and%20left%20it%20to%20finishing%20up%20baking.%3C/p%3E%3Cp%3EEven%20dusting%20it%20generously%20with%20icing%20sugar%20couldn't%20cover%20up%20the%20flaws!%20But,%20the%20cake%20tasted%20good,%20very%20good%20indeed,%20just%20look%20at%20the%20crumb:%3C/p%3E%3Cp%3EI%20have%20used%20a%20smaller%20pan%20the%20first%20time%20I%20made%20this%20cake,%20as%20a%20result,%20the%20cake%20was%20much%20taller%20than%20this%20latest%20version...%3C/p%3E%3Cp%3EThis%20was%20baked%20using%20a%2020cm%20pan%20as%20recommended%20by%20the%20recipe,%20the%20cake%20was%20quite%20flat%20upon%20cooling,%20making%20it%20looked%20almost%20like%20a%20sponge%20layer.%20The%20cake%20was%20nicely%20browned%20this%20time%20as%20I%20covered%20the%20top%20with%20foil%20once%20the%20surface%20started%20to%20brown.%20The%20cake%20is%20excellent,%20it%20is%20deliciously%20moist,%20very%20fragrant%20and%20I%20could%20even%20taste%20the%20bits%20of%20ground%20almond%20in%20the%20crumb.%20The%20flaked%20almonds%20makes%20the%20texture%20even%20more%20interesting.%20A%20piece%20of%20this%20goes%20so%20well%20with%20a%20cup%20of%20afternoon%20tea,%20or%20anytime%20of%20the%20day.%20Plus,%20I%20won't%20be%20hesitant%20to%20bake%20this%20to%20give%20away%20anytime.%3C/p%3E%3Cp%3EFrench%20Almond%20Cake%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3E(makes%20one%208%22%20cake)%3C/p%3E%3Cp%3EMethod%3C/p%3E%3Cp%3EPre-heat%20oven%20at%20180degC.%20Grease%20(with%20butter)%20and%20flour%20the%20sides%20of%20a%2020cm%20pan,%20line%20the%20base%20with%20parchment%20paper,%20set%20aside.%3C/p%3E%3Cp%3EPlace%20butter,%20sugar%20and%20eggs%20in%20a%20mixing%20bowl,%20add%20almond%20powder,%20flour,%20milk,%20vanilla%20extract%20(optional)%20then%20beat%20with%20an%20electric%20mixer%20or%20whisk.%20When%20quite%20light%20and%20fluffy,%20spoon%20into%20the%20prepared%20pan%20and%20spread%20the%20batter%20evenly.%20Sprinkle%20the%20flaked%20almonds%20over%20the%20top.%3C/p%3E%3Cp%3EBake%20at%20180degC%20for%2030-35mins,%20or%20until%20the%20sponge%20just%20springs%20back%20when%20pressed%20(mine%20took%2040mins),%20or%20a%20skewer%20inserted%20into%20the%20centre%20comes%20out%20clean.%20(Important%20Note:%20Cover%20the%20top%20with%20foil%20about%2015-20mins%20into%20baking%20to%20prevent%20the%20top%20from%20over%20browning.)%3C/p%3E%3Cp%3ERun%20a%20thin%20bladed%20knife%20around%20the%20sides%20of%20the%20pan%20to%20loosen%20the%20cake,%20then%20turn%20out%20onto%20a%20wire%20rack%20and%20let%20cool.%20Dust%20with%20icing%20sugar%20before%20serving.%3C/p%3E%3Cp%3ERecipe%20source:%20adapted%20from%20Easy%20Cakes%20by%20Linda%20Collister%3C/p%3E){kind=link}
