.%20%20I%20also%20typically%20use%20my%20Kitchen%20Aid%20mixer.%20%20But%20there%E2%80%99s%20something%20really%20nice%20about%20making%20the%20pie%20pastry%20by%20hand,%20especially%20on%20top%20of%20beautiful%20marble%20countertops.%20%20All%20of%20the%20ingredients%20are%20listed%20below%20(in%20metric%20weights).%20%20I%20don%E2%80%99t%20even%20own%20a%20digital%20scale.%20%20I%20plan%20to%20buy%20one%20soon%20and%20make%20both%20recipes%20at%20home%20very%20soon,%20so%20I%E2%80%99ll%20share%20the%20conversions%20if%20you%E2%80%99d%20like.%20%20Or%20if%20you%E2%80%99re%20a%20serious%20baker,%20then%20you%E2%80%99ve%20probably%20already%20switched%20to%20weighing%20instead%20of%20measuring.%3C/p%3E%3Cp%3ESo%20let%E2%80%99s%20get%20started.%20%20Cut%20the%20chilled%20%20butter%20into%20cubes%20to%20throughly%20mix%20it%20into%20the%20flour.%3C/p%3E%3Cp%3EKeep%20cutting%20until%20the%20butter%20is%20in%20small%20pieces.%3C/p%3E%3Cp%3EOnce%20the%20butter%20pieces%20are%20small%20and%20well%20coated%20with%20flour,%20mix%20the%20flour%20and%20butter%20with%20the%20tips%20of%20your%20fingers%20until%20the%20mix%20looks%20like%20powder.%3C/p%3E%3Cp%3EMix%20together%20salt,%20sugar,%20egg%20and%20water%20and%20then%20pour%20into%20a%20well%20that%20you%E2%80%99ve%20made%20with%20the%20flour/butter%20mixture.%20%20This%20is%20my%20classmate%20Nigel%20from%20Australia%20pouring%20our%20egg%20mixture%20into%20the%20middle%20of%20the%20well.%3C/p%3E%3Cp%3EHere%E2%80%99s%20what%20it%20looks%20like%20right%20before%20it%20becomes%20dough.%20%20Mix%20all%20by%20ingredients%20by%20hand%20until%20it%20losing%20its%20stickiness.%20%20Although%20it%E2%80%99s%20important%20not%20to%20overwork%20the%20dough%20so%20the%20gluten%20doesn%E2%80%99t%20develop%20and%20you%E2%80%99ll%20end%20up%20with%20tough%20dough%20(and%20dough%20that%20will%20more%20likely%20shrink%20when%20baking).%3C/p%3E%3Cp%3EWe%20rolled%20out%20the%20dough%20until%20thin,%20coating%20the%20countertops%20and%20wooden%20rolling%20pin%20with%20flour%20so%20it%20wouldn%E2%80%99t%20stick.%20We%20then%20used%20our%20tart%20pans%20as%20a%20guide%20to%20cut%20a%20larger%20circle.%20%20I%20bought%20some%20of%20these%20mini%20tart%20pans%20while%20I%20was%20in%20Paris,%20so%20can%E2%80%99t%20wait%20to%20make%20these%20at%20home.%20The%20dough%20was%20then%20placed%20into%20the%20mold,%20nestled%20in%20and%20then%20we%20used%20the%20back%20of%20our%20knife%20to%20trim%20around%20the%20edges.%20%20One%20step%20that%20I%20often%20skip%20is%20brushing%20away%20the%20extra%20flour%20on%20top.%20%20That%E2%80%99s%20important,%20I%20learned,%20so%20the%20topical%20flour%20doesn%E2%80%99t%20provide%20a%20raw%20taste%20to%20the%20crust.%3C/p%3E%3Cp%3EThe%20bottom%20dough%20was%20pricked%20with%20a%20fork%20so%20it%20wouldn%E2%80%99t%20puff%20up%20in%20the%20oven.%20%20Then%20we%20added%20parchment%20paper%20and%20dried%20beans%20to%20the%20tart%20pans%20to%20keep%20the%20dough%20in%20place%20when%20baking.%20%20Chill%20the%20dough%2015%20minutes%20before%20baking.%20%20The%20tart%20pans%20are%20baked%20for%2030%20minutes.%20%20After%20they%E2%80%99ve%20cooled%20down,%20remove%20from%20the%20pan.%20%20Do%20this%20gently%20not%20to%20break%20the%20tender%20crust.%20%20Ours%20came%20out%20easily%20%E2%80%94%20just%20tip%20over%20into%20your%20hand,%20then%20lower%20onto%20a%20tray.%3C/p%3E%3Cp%3EFor%20the%20lemon%20filling,%20we%20squeezed%20fresh%20lemons%20and%20brought%20it%20to%20a%20boil%20with%20sugar.%20%20In%20a%20separate%20bowl,%20whisk%20eggs,%20egg%20yolks%20and%20sugar%20together%20until%20the%20mixture%20is%20thick%20and%20pale.%20%20Add%20cornstarch%20and%20mix.%20%20Pour%20half%20of%20the%20hot%20juices%20into%20the%20egg%20mixture%20to%20temper%20the%20eggs,%20mix%20well,%20then%20pour%20back%20into%20the%20saucepan.%20%20Cook%20the%20lemon%20cream%20on%20medium%20heat.%20%20When%20it%20boils,%20cook%20for%201%20more%20minute,%20whisking%20constantly.%20%20Transfer%20to%20a%20large%20bowl,%20add%20the%20cream%20and%20leave%20to%20cool.%3C/p%3E%3Cp%3EFor%20the%20meringue,%20bring%20sugar%20and%20water%20to%20a%20boil%20and%20cook%20to%20118%20C.%20%20When%20the%20sugar%20is%20at%20115%20C,%20start%20beating%20the%20egg%20whites%20with%20a%20whisk.%20%20When%20sugar%20syrup%20is%20at%20118%20C,%20pour%20onto%20the%20beaten%20egg%20whites%20and%20go%20on%20whisking%20until%20the%20meringue%20cools%20down%20(50%20C).%20%20%20%20To%20assemble,%20add%20the%20butter%20at%20room%20temperature%20to%20the%20lemon%20cream,%20a%20little%20at%20a%20time,%20whisking.%20%20Pour%20the%20lemon%20cream%20into%20the%20tart%20shell.%20%20Just%20before%20serving,%20pipe%20the%20meringue%20on%20top%20of%20the%20lemon%20cream.%3C/p%3E%3Cp%3EUse%20a%20small%20torch%20or%20the%20oven%20to%20get%20the%20top%20of%20the%20meringue%20golden.%3C/p%3E%3Cp%3ETa%20da!%20%20Perfection.%3C/p%3E%3Cp%3ETarte%20au%20Citron%20Meringuee%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EMakes%205-6%20tartelet
