Receta Fried Rice With Plantains & Grilled King Prawns
Gourmet meal from my kitchen. Recipe from my Canadian friend.
Ingredientes
- Fried Rice
- Ingredients ( 2 serving )
- 2 bowl cooked rice (cool completely)
- 1 small capsicum (diced)
- 1 small onion (slice thinly)
- 2 tbsp dried prawns (wash and drain dry)
- 2 cloves garlic (chopped)
- 2 bird eyes chili (slice thinly)
- 2 tbsp oil
- 1/2 tsp salt or to taste
- 1/4 tsp pepper
- 2 tsp light soya sauce
- 1/2 tsp sesame oil
- Garnishing
- Fried shallots
- Chopped spring onion
- 1/4 piece lemon
- Grilled Prawns
- 4 large king prawns
- 2 tsp L & P worcestershire sauce
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp rum ( For muslim please omit this and replace with ginger juice)
- 1 tsp oil
- Fried Plantains
- 2 pieces ripe plantains
- 4 pieces spring roll pastry
- Brown sugar

- Method for Fried Rice
- 1/ Heat oil in wok, saute garlic, onion and dried prawns until fragrant and garlic slightly brown.
- 2/ Add capsicum, bird eyes chili and salt, stir fry for 1 min.
- 3/ Add the cooked rice and mixed well. Add pepper, light soya sauce and sesame oil. Add salt according to your taste.
- 4/ Stir fry for about 5 mins until you smell fragrant scent. Remove from wok and put on serving plate.
- Method for Grilled Prawns
- 1/ Trimmed the prawns legs, wash and pat dry with kitchen towel.
- 2/ Season the prawn with L & P worcestershire sauce, salt, pepper and rum or ginger juice.
- 3/ Cover with cling wrap and keep in the fridge for 4 hours.
- 4/ Thread the prawns with bamboo skewer or BBQ skewers lengthwise to prevent curling. This is good if you want your prawns nice and straight.
- 5/ Grilled the prawns 3 mins on each side or until turn pink and are lightly charred on both side. Do not overcook or it taste rubbery. Prawns are best grilled quickly but not over too high of a heat. Prawns are done when the entire outside surface has changed color.
- Note: You do not have to devein prawn as long as the prawns are properly cooked. The vein isn't going to cause any health risk.
- Method for Fried Plantains
- 1/ Peel plantains and cut half.
- 2/ Slice halves lengthwise and wrap with spring roll pastry.
- 3/ Heat oil in wok. Fried plantains in hot oil using low heat, cook until both side slightly brown.
- 4/ Remove from oil and transfer to paper towel to drain off excess oil. Sprinkle brown sugar immediately on both side of plantains.
