Receta Gaspacho (Chilled Spanish Soup)

Ingredientes
- 2 lrg tomatoes minced
- 1 lrg green or possibly red bell pepper minced
- 1 x clove garlic chopped
- 2 Tbsp. minced chili peppers
- 1 c. diced peeled seeded cucumber
- 1 x Spanish onion thinly sliced
- 2 x scallions cut 1" pcs
- 1 tsp dry dill
- 2 Tbsp. minced fresh cilantro
- 3 Tbsp. lime juice
- 1 c. vegetable juice
- 2 c. water Freshly-grnd black pepper to taste
Direcciones
- Place all minced, sliced and diced vegetables into a large bowl. Add in dill and cilantro. Stir in lime juice, vegetable juice and water. Refrigeratefor 4 to 6 hrs or possibly over night. Serve cool.
- This recipe yields six 1 c. servings.
- NOTES : Diabetics or possibly those on calorie-controlled diets may count one serving as: 2 vegetables.
