- 1/2 cup boiling water (I microwaved the water to heat)
- 2-1/2 cups all-purpose flour
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- Pinch of salt
- 4 egg whites- beaten to stiff peaks
- 1 can evaporated milk (12 ounces)
- 1 1/2 teaspoon pure vanilla extract
- 3 Cups flaked coconut
- 1 3/4 Cups sugar
- 1 Cup pecans-crushed
