- 3/4 cup dark cocoa powder
- 2 cups sugar
- 2 cups all-purpose flour
- 2 tbsp cornstarch
- 2 tsp baking powder
- 1 tsp salt
- 3/4 cup vegetable oil
- 4 large eggs
- 2 tsp vanilla extract
- for the topping-
- 1 cup light brown sugar
- 1 tbsp + 2 tsp cornstarch
- 1/4 tsp salt
- 5 tbsp butter
- 3/4 cup half & half (or milk)
- 2 tbsp corn syrup
- 1 tsp vanilla extract
- 1 1/2 cups toasted shredded coconut
- 1 1/2 cups toasted chopped pecans

%20future%20sister-in-law%20Katelyn%20and%20I%20set%20out%20to%20make%20one.%20If%20I%20remember%3C/p%3E%3Cp%3Ecorrectly,%20we%20had%20to%20borrow%20cake%20pans%20and%20we%20didn%E2%80%99t%20really%20know%20our%20way%20around%20the%20kitchen%20(at%20least%20not%20like%20now!),%3C/p%3E%3Cp%3Ebut%20we%20managed%20to%20construct%20a%20somewhat%20lopsided,%20but%20still%20tasty,%20German%3C/p%3E%3Cp%3Echocolate%20cake.%3C/p%3E%3Cp%3EYears%20later,%20I%E2%80%99ve%20now%20made%20several%20layer%20cakes%20(my%20favorite%3C/p%3E%3Cp%3Ebeing%20this%20dark%20chocolateone!),%20and%20have%20more%20cake%20pans%20than%20I%20know%20what%20to%20do%20with!%20My%20cakes%20do%20sometimes%20still%20come%20out%20a%20little%3C/p%3E%3Cp%3Elopsided%20from%20time%20to%20time,%20a%20mistake%20easily%20avoided%20by%20making%20a%20sheet%20cake%3C/p%3E%3Cp%3Einstead%20of%20a%20layer%20cake!%20This%20German%20chocolate%20cake%20comes%20together%20quickly%20in%20a%3C/p%3E%3Cp%3E9%20x%2013%20inch%20pan.%20The%20cake%20itself%20is%20spongy,%20with%20a%20deep%20chocolate%20flavor.%20Even%3C/p%3E%3Cp%3Eif%20you%20aren%E2%80%99t%20a%20fan%20of%20the%20frosting%20on%20German%20chocolate%20cake,%20this%20would%20be%20a%3C/p%3E%3Cp%3Egreat%20chocolate%20base%20for%20just%20about%20any%20frosting!%3C/p%3E%3Cp%3EEven%20though%20I%20forgot%20to%20toast%20the%20pecans%20AND%20coconut,%20the%3C/p%3E%3Cp%3Efrosting%20was%20easily%20my%20favorite%20part%20of%20the%20cake.%20Yes,%20it%E2%80%99s%20almost%20sickly%3C/p%3E%3Cp%3Esweet,%20but%20the%20sugar%20is%20tempered%20by%20the%20dark%20chocolate%20in%20the%20cake,%20and%20a%20small%3C/p%3E%3Cp%3Epiece%20is%20enough%20to%20satisfy!%20Half%20of%20this%20went%20to%20our%20pastor%E2%80%99s%20family,%20in%3C/p%3E%3Cp%3Ecelebration%20of%20their%20fourth%20baby,%20and%20the%20other%20half%20went%20to%20work,%20where%20not%20a%3C/p%3E%3Cp%3Ecrumb%20was%20left%20by%20lunchtime!%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20the%20oven%20to%20350F.%20Line%20a%209%20x%2013%20inch%20baking%20dish%20with%20foil%20and%20spray.%20Add%20the%20boiling%20water%20to%20the%20cocoa%20and%20stir%20until%20blended.%20Set%20aside%20to%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3E2.%20Whisk%20the%20remaining%20dry%20(cake)%20ingredients%20together%20in%20a%20large%20mixing%20bowl.%20Add%20the%20eggs%20and%20oil%20and%20beat%20for%202%20minutes%20on%20medium%20speed,%20scraping%20down%20the%20sides%20of%20the%20bowl%20as%20needed.%20Add%20the%20vanilla.%20Stir%20in%20the%20cocoa%20mixture%20in%20three%20additions,%20beating%20after%20each%20addition.%20Pour%20the%20batter%20into%20the%20prepared%20pan.%3C/p%3E%3Cp%3E3.%20Bake%20the%20cake%20for%2030-35%20minutes,%20until%20an%20inserted%20toothpick%20comes%20out%20clean.%20Allow%20cake%20to%20cool%20on%20a%20wire%20rack%20while%20you%20make%20the%20frosting.%3C/p%3E%3Cp%3E4.%20To%20make%20the%20topping,%20whisk%20together%20the%20brown%20sugar,%20cornstarch,%20and%20salt.%20Set%20aside.%20Melt%20the%20butter%20in%20a%20medium-sized%20saucepan.%20Stir%20in%20the%20half%20&%20half,%20sugar%20mixture,%20and%20corn%20syrup.%20Bring%20to%20a%20simmer%20and%20cook,%20stirring%20constantly,%20until%20sugar%20dissolves%20and%20mixture%20starts%20to%20thicken%20(1-2%20minutes).%3C/p%3E%3Cp%3E5.%20Remove%20from%20heat%20and%20stir%20in%20vanilla,%20coconut,%20and%20pecans.%20Spread%20the%20topping%20onto%20the%20cake,%20and%20allow%20to%20rest%20for%20at%20least%201%20hour%20before%20cutting%20into%20pieces.%3C/p%3E){kind=link}
