Like most food bloggers, this past week I saw the movie Julie & Julia…and LOVED it!!! The foodie in me loved it…the blogger in me adored it…and let’s just say that I have been known to panic and possibly melt down in the kitchen, so I couldn’t stop laughing!
Since the movie I have been dreaming about French food. Before my Celiac diagnosis, I enjoyed a DECADENT meal at Chez Nous in Austin, Texas. I have often joked that I would fly back just to eat their again. %3C/p%3E%3Cp%3EOne%20of%20the%20scenes%20from%20the%20movie%20that%20really%20stuck%20with%20me,%20was%20when%20Amy%20Adam%E2%80%99s%20was%20cooking%20mushrooms.%20This%20past%20weekend%20I%20bought%20a%20container%20of%20mushrooms%20with%20the%20plan%20of%20cooking%20Julia%20Child%E2%80%99s%20Creamy%20Mushroom%20Chicken%20dish.%3C/p%3E%3Cp%3E%E2%80%A6then%20I%20tried%20on%20wedding%20dresses%20on%20Monday.%20Now%20I%20am%20not%20going%20to%20be%20one%20of%20those%20brides%20who%20bores%20you%20with%20her%20woes%20of%20weight%20and%20blah,%20blah,%20blah%E2%80%A6at%20least%20not%20on%20this%20blog!%20I%E2%80%99m%20an%20active%20gal%20and%20I%20love%20my%20body.%20However,%20I%20like%20my%20weight%20where%20it%20is,%20and%20a%20few%20of%20Julia%20Child%E2%80%99s%20recipes%20would%20quickly%20get%20me%20off%20course!%20:)%20So%20I%20decided%20to%20switch%20the%20recipe%20up%20a%20bit,%20lighten%20it,%20and%20rely%20on%20Paula%20Deen%20to%20get%20me%20there.%20(I%20know,%20I%20know%20Paula%20and%20lighten%20aren%E2%80%99t%20often%20in%20the%20same%20sentence,%20but%20I%20adapted%20it!!)%3C/p%3E%3Cp%3EChicken%20Child%20a%20la%E2%80%99%20Deen%20or%20Chicken%20Chapel%20Hill%3C/p%3E%3Cp%3EThis%20recipe%20is%20adapted%20from%20Paula%20Deen%E2%80%99s%20recipe%20for%20Chicken%20Georgia.%20You%20can%20find%20her%20version%20at%20Food%20Network.com.%20My%20sister%20has%20made%20Paula%E2%80%99s%20precise%20recipe%20before%20and%20it%20was%20awesome!%3C/p%3E%3Cp%3EThe%20STAR:%3C/p%3E%3Cp%3EI%20melted%203%20tbsp.of%20%E2%80%98I%20Can%E2%80%99t%20Believe%20It%E2%80%99s%20Not%20Butter%20Light%E2%80%99.%20Once%20warm,%20I%20added%20two%20hand%20fulls%20of%20sliced%20mushrooms,%20one%20garlic%20clove%20minced,%20and%20around%202%20tbsp.%20of%20onion%20minced.%20Sprinkle%20with%20salt%20and%20pepper.%20I%20cooked%20the%20mushroom%20mixture%20for%20around%2010%20minutes.%20Using%20Julia%E2%80%99s%20tip:%20Give%20the%20mushrooms%20room.%20Don%E2%80%99t%20crowd.%3C/p%3E%3Cp%3E***About%2025%20minutes%20before%20I%20started%20cooking%20I%20was%20driving%20home%20from%20work.%20I%20called%20Parrish%20and%20asked%20him%20to%20take%20two%20frozen%20boneless%20chicken%20breasts%20from%20the%20freezer%20and%20pop%20them%20in%20the%20oven.%20They%20baked%20at%20375%20for%20about%E2%80%A620%20minutes***%20Then%20I%20added%20the%20prebaked%20chicken%20breasts%20and%20let%20them%20soak%20in%20the%20mushroom%20mixture%20and%20cook%20for%20about%2010%20minutes.%20I%20continually%20stirred%20the%20mushroom%20mixture%20while%20the%20chicken%20cooked%20and%20frothed%20the%20not-butter%20underneath%20the%20breasts.%20Pull%20the%20chicken%20from%20the%20mushroom%20mixture%20and%20top%20with%20the%20cheese%20of%20your%20choice.%20Paula%20Deen%20calls%20for%20mozzarella;%20I%20used%20Colby%20Jack.%20Spoon%20the%20mushroom%20mixture%20on%20top%20and%20serve!%3C/p%3E%3Cp%3EWe%20enjoyed%20ours%20with%20saut%C3%A9ed%20baby%20bok%20choy.%20It%20was%20SO%20good!!%20Not-Buttery%20mushrooms%E2%80%A6mmmmmmm%3C/p%3E%3Cp%3EParrish%20and%20I%20were%20BOTH%20big%20fans!!!%20Clean%20Plate%20Club%20for%20sure!%3C/p%3E%3Cp%3ENew%20Season%20of%20TOP%20CHEF!!!!%20Are%20you%20guys%20watching%20right%20now%20too?%20Who%20are%20you%20pulling%20for?%3C/p%3E){kind=link}
