- Thai Red Beef Curry
- 1 tablespoon vegetable oil
- 1 1/2 tablespoons red curry paste (we used Pataks mild curry paste)
- 1 (14 ounce) can of coconut milk
- 2 tablespoons fish sauce (we used Blue Dragon brand)
- 4 tablespoons light brown sugar
- 1 1/2 pounds flank steak, trimmed and sliced thin
- 1 red bell pepper, stemmed, seeded and cut into 1/4 inch strips
- 1/2 pound snap peas, strings removed
- 1/2 cup coarsely chopped fresh basil
- 1 tablespoon fresh lime juice
- salt to taste
