.%20%20I%20also%20wanted%20to%20do%20something%20a%20little%20bit%20different.%20%20%20This%20is%20our%20first%20gluten%20free%20Thanksgiving,%20so%20I%20wanted%20to%20create%20a%20round%20up%20of%20gluten%20free%20Thanksgiving%20(or%20other%20holiday)%20dishes.%20%20Have%20you%20got%20one%20to%20share?%20%20Click%20on%20the%20link%20below%20to%20enter%20the%20link%20to%20your%20recipe.%20%20Be%20sure%20to%20link%20to%20the%20static%20page,%20not%20the%20main%20page%20of%20the%20blog%20or%20website.%3C/p%3E%3Cp%3EOn%20to%20the%20turkey!%3C/p%3E%3Cp%3EI%20love%20oven%20roasted%20turkey.%20%20Sadly%20I%20don%E2%80%99t%20have%20it%20but%20a%20few%20times%20a%20year%20because%20hubs%20prefers%20ham,%20and%20frankly,%20a%20whole%20turkey%20is%20a%20lot,%20even%20for%20me.%20%20I%E2%80%99ve%20made%20it%20a%20personal%20quest%20to%20create%20the%20perfect,%20juicy%20turkey,%20and%20I%E2%80%99ve%20done%20well%20enough%20over%20the%20last%20several%20years%20that%20turkey%20cooking%20duty%20falls%20to%20me%20for%20all%20holidays.%20%20Hence%20why%20I%20have%20this%20one%20to%20show%20you%20from%20Easter.%3C/p%3E%3Cp%3EThere%20is%20one,%20very%20important%20key%20to%20a%20juicy%20turkey.%20%20BRINING.%3C/p%3E%3Cp%3EIf%20you%E2%80%99re%20not%20a%20Food%20Network%20junkie,%20you%20may%20never%20have%20heard%20of%20brining.%20%20It%E2%80%99s%20kinda%20like%20marinating,%20wherein%20the%20meat%20is%20soaked%20in%20a%20brine%20before%20cooking.%20%20The%20point%20is%20to%20impart%20extra%20moisture%20into%20the%20meat.%20%20You%20can%20read%20about%20the%20science%20of%20it%20here%20on%20Wikipedia.%20%20It%E2%80%99s%20also%20an%20opportunity%20to%20impart%20extra%20flavor%20into%20your%20meat,%20depending%20on%20what%20you%20use.%20%20The%20central%20feature%20of%20any%20brine%20(no%20matter%20what%20else%20gets%20added)%20is%20that%20you%20start%20with%20water%20and%20salt.%20%20You%20can%20read%20about%20the%20basics%20of%20brining%20poultry%20here.%20%20%20My%20brine%20is%20a%20little%20bit%20different.%3C/p%3E%3Cp%3EI%20use%20beer.%3C/p%3E%3Cp%3EI%20know,%20weird,%20right?%20%20Here%E2%80%99s%20the%20thing.%20%20I%20love%20beer%20IN%20STUFF,%20I%20just%20don%E2%80%99t%20like%20to%20drink%20it.%20%20It%20makes%20great%20bread%20and%20a%20fantastic%20turkey.%20%20So%20here%20we%20go.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EFor%20Brine:%3C/p%3E%3Cp%3E1%20large%20bucket%20(mine%20is%203%20gallons)%3C/p%3E%3Cp%3E3%20small%20trash%20bags%20(bigger%20than%20Walmart%20sacks%20but%20not%20not%20the%20giant%20ones)%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3EBe%20sure%20your%20bucket%20is%20scrubbed%20clean.%3C/p%3E%3Cp%3ELayer%20the%20trash%20bags%20one%20inside%20the%20other,%20with%20the%20excess%20folded%20over%20the%20lip%20of%20the%20bucket.%20%20You%E2%80%99ll%20be%20tying%20each%20of%20them%20individually%20after%20you%E2%80%99ve%20got%20the%20turkey%20and%20brine%20inside.%3C/p%3E%3Cp%3ERinse%20your%20turkey.%20%20Place%20it%20in%20the%20lined%20bucket.%3C/p%3E%3Cp%3EAdd%20the%20beer.%3C/p%3E%3Cp%3EAdd%20the%20garlic.%3C/p%3E%3Cp%3EIn%20a%20large%20measuring%20cup%20(like%204%20cups)%20add%20the%20sugar%20and%20salt%20and%20top%20it%20off%20with%20warm%20water.%3C/p%3E%3Cp%3EStir%20until%20the%20salt%20and%20sugar%20are%20dissolved.%3C/p%3E%3Cp%3EAdd%20this%20mixture%20to%20the%20bucket.%3C/p%3E%3Cp%3EIf%20you%20need%20to%20add%20more%20water%20so%20that%20the%20liquid%20covers%20your%20turkey%20most%20of%20the%20way%20to%20the%20top,%20go%20ahead.%3C/p%3E%3Cp%3ETie%20off%20each%20bag%20individually%20and%20pop%20it%20in%20your%20fridge.%3C/p%3E%3Cp%3EThere%E2%80%99s%20no%20hard%20and%20fast%20rule%20for%20how%20long%20you%20should%20brine%20a%20turkey.%20%20I%20usually%20do%20mine%20overnight.%3C/p%3E%3Cp%3EOn%20cooking%20day,%20you%E2%80%99ll%20want%20to%20pull%20the%20turkey%20from%20the%20brine%20(definitely%20use%20a%20sink%20or%20you%E2%80%99ll%20make%20a%20mess)%20and%20plop%20it%20into%20a%20roasting%20pan.%3C/p%3E%3Cp%3EPreheat%20your%20oven%20to%20375%20degrees.%3C/p%3E%3Cp%3EThen%20you%E2%80%99ll%20want%20to%20reach%20into%20the%20rear%20cavity%20of%20the%20bird%20where%20that%20big%20flap%20of%20skin%20is,%20and%20carefully%20loosen%20the%20skin%20from%20the%20meat.%20%20Be%20sure%20not%20to%20REMOVE%20IT.%20%20You%E2%80%99re%20just%20making%20room%20to%20shove%20some%20things%20beneath%20the%20skin.%3C/p%3E%3Cp%3EYou%20can%20use%20butter%20or%20olive%20oil%20(your%20choice).%20%20For%20this%20particular%20bird,%20I%20used%20olive%20oil,%20as%20it%E2%80%99s%20what%20I%20had%20on%20hand.%20%20I%20rubbed%20it%20all%20over%20the%20meat%20beneath%20the%20skin,%20then%20added%20a%20dollup%20to%20the%20outside%20of%20the%20bird%20and%20massaged%20it%20in%20well.%3C/p%3E%3Cp%3EBe%20sure%20to%20wash%20your%20hands%20a%20lot%20during%20this%20process%20between%20steps%20so%20you%E2%80%99re%20not%20spreading%20salmonella%20germs.%3C/p%3E%3Cp%3EFinish%20off%20the%20top%20of%20the%20bird%20with%20some%20fresh%20cracked%20black%20pepper%20and%20kosher%20salt.%3C/p%3E%3Cp%3EFeel%20free%20to%20shove%20some%20fresh%20herbs%20beneath%20the%20skin%20if%20you%E2%80%99re%20so%20moved.%3C/p%3E%3Cp%3EAdd%20a%20cup%20of%20water%20to%20the%20roasting%20pan.%3C/p%3E%3Cp%3ECover%20the%20bird%20with%20foil.%3C/p%3E%3Cp%3EBake%20covered%20for%2090%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20foil,%20then%20bake%20the%20remainder%20of%20the%20time%20(you%E2%80%99re%20going%20for%2015%20minutes%20per%20pound%20here,%20so%20my%2014%20pounder%20took%203%20and%20a%20half%20hours)%20to%20get%20the%20desired%20browning%20of%20the%20skin.%3C/p%3E%3Cp%3EBe%20sure%20and%20use%20a%20meat%20thermometer%20in%20the%20thickest%20part%20of%20the%20turkey.%20%20You%20want%20it%20to%20read%20180%20degrees%20to%20be%20sure%20that%20you%E2%80%99ve%20killed%20off%20all%20bacteria.%3C/p%3E%3Cp%3EWhen%20it%E2%80%99s%20finished,%20remove%20the%20turkey%20from%20the%20oven%20and%20re-cover%20it%20with%20foil.%3C/p%3E%3Cp%3EYou%E2%80%99ll%20want%20to%20allow%20it%20to%20sit%20for%20at%20least%2015%20minutes%20for%20the%20juices%20to%20redistribute.%3C/p%3E%3Cp%3EThen%20slice,%20serve,%20and%20ENJOY.%3C/p%3E){kind=link}
