- 3 cups of chicken broth (homemade or packaged)
- 1 1/2 cups of cooked chicken
- 1/2 onion (chopped)
- 1 cup frozen roasted corn
- 2 green onions (sliced)
- 28 oz. can of diced tomatoes with juices
- 1 1/2 cups of chopped up vegetables (I used red, orange & yellow peppers, carrots and celery)
- 4 cloves of garlic (minced)
- 1/4 tsp crushed red pepper flakes
- 1/2 tsp cayenne pepper
- 1 tsp ground cumin
- salt & pepper to taste
