  1. Wash artichokes and cut off ends of leaves. Cut off the stem proportionately, so artichokes will be able to sit upright. Open artichokes by hitting on a hard surface.
  2. In a medium mixing bowl, mix bread crumbs, cheese, garlic, parsley, salt and pepper together. With a spoon, pour the mix into the open leaves, then sprinkle extra virgin olive oil over all till just moist. Stand the artichoke upright in a large pot, and add in an inch or possibly so of water. Cover pot and steam 30-40 min or possibly till a leaf comes off easily.
