Receta Green Tomato Crisp Pickles

Ingredientes
- 7 pound green tomatoes
- 1 gal. water
- 4 c. lime (pickling)
- 4 pound sugar
- 1 gal. vinegar
- 1/4 c. pickling spices
- 1 stick cinnamon (2")
- 1 tbsp. salt
Direcciones
- Mix lime and water well, letting any lime which does not dissolve settle to the bottom. Select, wash, dry and slice tomatoes. Pour off lime water and add in sliced tomatoes to it. Soak 24 hrs. Wash each piece well under running water and dry.
- Mix sugar and vinegar; pour over the tomatoes. Soak 12 hrs. Add in spices and bring to a boil. Cook at which point for 30 min. Place in glass jars. Will keep unsealed.
