Receta Green & White Chicken Pinwheels
Ingredientes
- 4 ounce. chicken breast, boned, skinned & pounded to 1/2 original thickness
- 1 c. cooked spinach, well liquid removed & minced
- 2 teaspoon lemon juice
- Dash of each onion pwdr, allspice & cinnamon
- 1/2 teaspoon dry mint
- Pepper to taste
- 2 teaspoon lemon juice & paprika to coat the chicken before baking
Direcciones
- Mix the spinach, 2 tsp. lemon juice, onion pwdr, allspice, cinnamon, mint and pepper. Spread mix over entire surface of the pounded chicken breast. Roll "jelly roll" fashion. Secure with toothpick. Sprinkle entire surface of chicken roll with lemon juice and paprika. Wrap in foil tightly and bake in preheated 350 degree oven for 30 min. Serve cool. At serving time, slice chicken into pinwheels and arrange attractively on plate. May be served warm, but doesn't slice as attractively.
