Ingredientes
- 1/4 c. Fresh lemon juice
- 1/2 c. Extra virgin olive oil
- 1 Tbsp. Capers
- 1 Tbsp. Finely-minced parsley Freshly-grnd black pepper to taste
- 12 med Asparagus spears tough end removed
- 2 Tbsp. Extra-virgin extra virgin olive oil Salt to taste
- 12 slc Prosciutto - (thin slices)
- 12 x Thinly-shaved pcs of Pecorino Romano cheese
Direcciones
- Whisk together the lemon juice and extra virgin olive oil in a small bowl. Add in the capers and parsley and season with black pepper.
- Preheat grill.
- Grill the asparagus, brushed with extra virgin olive oil. Toss the asparagus with the extra virgin olive oil and season with salt and pepper to taste. Wrap a piece of prosciutto around each spear and place on a platter. Drizzle with lemon-caper vinaigrette and top with the cheese.
