Receta Grilled Corn California Mexican Quinoa
Ingredientes
- 1 cup uncooked quinoa
- 3 ears of corn, husks and silks removed
- 1 sweet red pepper
- 1 jalapeño
- 1 Tbs oil (I use avocado oil)
- 1 cups cherry tomatoes, halved or quartered
- 1 can black beans, drained and rinsed
- 1/2 cup sweet onion, chopped
- 1/3 to 1/2 cup chopped cilantro
- 1 cup (large handful) arugula
- 1 avocado, peeled, seeded and chopped
- juice of 3 limes (more or less as desired depending on how juicy limes are. I like about 3 Tbs lime juice)
- 2 Tbs good quality olive oil
- 1/4 tsp salt
- freshly ground pepper
- cilantro to garnish
