Receta Mexican Street Vendor Grilled Corn
This is sold as a snack in Mexico, but happens to make a great side dish, too.
Ingredientes
- oil
- 6 ears corn, husks and silk removed
- 1/2 cup Pecorino Romano
- 1/4 cup mayonnaise
- 3 tbs. sour cream or Homemade Mexican Crema
- 3 tbs. chopped cilantro
- juice of one lime (3-4 tsp.)
- 1 minced garlic clove
- 3/4 tsp. Tex-Mex Diablo Dust, or chili powder
- 1/4 tsp. ground pepper
- 1/4 tsp. salt
- cayenne pepper to taste
Direcciones
- Oil the grate with a paper towel.
- Combine cheese, mayo, crema, cilantro, lime juice, chili powder, pepper, salt in a bowl, and cayenne, if using. Set aside.
- Grill corn on all sides 8-12 minutes, lightly charring the ears.
- Toss ears in cheese mixture, serve immediately.
