- big handful mixed herbs: basil, dill, parsley, chives, chopped
- Dressing:
- 1 tbsp Dijon mustard
- 1/4 cup red wine vinegar
- 1/4 cup olive oil
- 1 tsp honey
- sea salt & pepper
