%20I%20found%20several%20simple%20yet%20yummy-looking%20recipes%20for%20grilled%20radicchio.%20I%20liked%20the%20idea%20that%20grilling%20the%20veg%20over%20high%20heat%20has%20a%20way%20of%20transforming%20its%20decidedly%20bitter%20taste%20to%20something%20mellowier%20and%20vaguely%20nutty.%3C/p%3E%3Cp%3EThe%20rest%20was%20history.%20I%20quartered%20the%20radicchio%20(you%20want%20to%20include%20part%20of%20the%20core%20in%20each%20piece%20to%20prevent%20it%20from%20falling%20apart),%20tossed%20the%20pieces%20with%20a%20generous%20mixture%20of%20olive%20oil,%20fresh%20orange%20juice,%20sea%20salt,%20and%20freshly%20ground%20black%20pepper%20(don't%20skimp!)%20and%20asked%20my%20husband,%20our%20resident%20grillmaster,%20to%20go%20fire%20things%20up.%3C/p%3E%3Cp%3EYou%20will%20need%20to%20watch%20the%20radicchio%20wedges%20closely%20as%20they%20can%20burn%20easily%20(a%20little%20char%20is%20good%20but%20too%20much%20is%20bad)%20and%20turn%20them%20often.%3C/p%3E%3Cp%3EAlthough%20you%20could%20just%20drizzle%20some%20good%20quality%20balsamic%20vinegar%20over%20them%20once%20they're%20done%20and%20tuck%20in,%20I%20found%20the%20idea%20of%20a%20salad%20more%20appealing.%20Cut%20the%20wedges%20into%20chunks,%20drizzle%20with%20a%20simple%20balsamic%20vinaigrette%20(suggested%20recipe%20below%20or%20feel%20free%20to%20use%20your%20own),%20and%20shave%20some%20Parmesan%20cheese%20over%20the%20whole%20thing.%3C/p%3E%3Cp%3EThe%20flavor%20is%20divine!%20Although%20some%20bites%20were%20still%20on%20the%20bitter%20side,%20I%20found%20it%20surprisingly%20addictive%20(sort%20of%20similar%20to%20the%20way%20I%20feel%20about%20this%20divine%20salad%20of%20shaved%20brussels%20sprouts,%20raw%20kale,%20toasted%20almonds%20and%20Parmesan.)%20The%20combination%20of%20the%20salty%20cheese,%20the%20sweet%20balsamic%20and%20the%20nutty,%20slightly%20bitter%20greens%20is%20goooood.%3C/p%3E%3Cp%3EI%20only%20had%20one%20head%20of%20radicchio%20but%20I've%20doubled%20the%20recipe%20below%20so%20you%20can%20feed%20four%20(or%20maybe%20five%20-%20depends%20how%20many%20people%20find%20it%20addictive...)%20with%20it.%20We%20ate%20ours%20with%20the%20scrumptious%20green%20beans%20with%20herby%20lemon%20aioli%20I%20posted%20recently%20and%20a%20delicious%20grilled%20shell%20steak.%3C/p%3E%3Cp%3EGrilled%20Radicchio%20Salad%20With%20Balsamic%20Dressing%20&%20Shaved%20Parmesan%3C/p%3E%3Cp%3EServes%204-5%20as%20a%20side%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EFor%20the%20salad:%3C/p%3E%3Cp%3E*%202%20heads%20of%20radicchio,%20quartered,%20so%20that%20each%20chunk%20has%20some%20of%20the%20core/stem%20holding%20it%20together%20(otherwise,%20you%20might%20need%20to%20put%20the%20leaves%20in%20a%20grill%20basket%20as%20they%20won't%20hold%20together)%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Make%20the%20dressing.%20Put%20the%20salt,%20garlic,%20mustard,%20maple%20syrup%20or%20honey%20and%20balsamic%20vinegar%20into%20a%20food%20processor%20or%20blender%20and%20pulse%20to%20combine.%20With%20the%20motor%20running,%20drizzle%20in%20the%20olive%20oil%20slowly%20until%20the%20dressing%20comes%20together.%20Or,%20you%20can%20also%20just%20whisk%20it%20all%20together%20with%20a%20fork%20if%20that%20is%20more%20your%20speed%20or%20you%20don't%20feel%20like%20washing%20a%20food%20processor%20(I%20know%20I%20never%20do...)%3C/p%3E%3Cp%3E2.%20Prepare%20your%20grill%20for%20high,%20direct%20heat.%3C/p%3E%3Cp%3E3.%20Coat%20quartered%20radicchio%20with%20olive%20oil%20and%20orange%20juice,%20then%20sprinkle%20with%20salt%20and%20pepper%20-%20make%20sure%20each%20piece%20is%20well-covered.%3C/p%3E%3Cp%3E4.%20Grill%20the%20radicchio%20over%20high%20heat,%20uncovered.%20Watch%20closely%20and%20turn%20often%20to%20prevent%20them%20from%20charring%20too%20much.%20You%20want%20them%20cooked%20and%20lightly%20charred%20in%20spots%20but%20not%20totally%20blackened.%20Remove%20to%20a%20bowl,%20plate%20or%20cutting%20board.%3C/p%3E%3Cp%3E5.%20Chop%20the%20radicchio%20quarters%20into%20bite-sized%20pieces%20and%20toss%20with%20the%20dressing.%20Garnish%20with%20shaved%20or%20grated%20Parmesan,%20Pecorino%20or%20Romano%20cheese%20(I%20urge%20you%20not%20to%20skimp%20on%20the%20cheese.)%20Serve%20hot%20or%20let%20cool%20down%20-%20it'd%20be%20good%20both%20ways.%3C/p%3E){kind=link}
