- 3 Tbsp Lime Juice (2 Limes)
- 2 Thai Birdâs Eye Chilies, finely chopped
- 2 Tbsp Finely Chopped Mint Leaves
- 3 Tbsp Finely Chopped Cilantro
- 1 ½ Tbsp Fish Sauce
- ¼ Cup Peanut Oil, or Vegetable Oil

- 4 Medium Ripe Mangoes, peeled, pitted and finely diced
- ½ Medium Sized Red Onion, finely diced
- 1 ½ - 2 Lime, juice
- 2-3 Red Chilies, seeded and finely chopped
- 10 Tbsp Orange Juice
- 4 Tbsp Chopped Fresh Cilantro
- ¼-½ tsp Ancho Chili Powder, or to taste
