%20but%20fish%20in%20general%20always%20feels%20more%20like%20a%20special%20meal,%20not%20an%20everyday%20thing.%20Why?%20Well%20there%E2%80%99s%20an%20education%20barrier%20and%20large%20learning%20curve%20we%20need%20to%20defeat.%20Recently%20I%20learned%20to%20sear%20perfect%20scallops.%20We%20won%E2%80%99t%20go%20into%20the%20months%20of%20practice%20and%20meals%20of%20well%20cooked%20scallops%20but%20ones%20that%20appeared%20to%20be%20baked,%20without%20any%20bit%20of%20seared%20crunch,%20or%20the%20ones%20that%20were%20just%20black.%20I%20can%20cook%20a%20fillet%20of%20fish,%20generally%20something%20white%20and%20flaky,%20which%20is%20done%20in%20one%20of%20two%20ways:%20baked%20with%20lemon%20juice%20and%20slices%20of%20lemon%20or%20broiled%20with%20lemon%20juice%20and%20slices%20of%20lemon.%20And%20that%20would%20be%20the%20extent%20of%20my%20fish%20knowledge.%3C/p%3E%3Cp%3EFish%20kind%20of%20scares%20the%20crap%20out%20of%20me.%20I%E2%80%99m%20not%20sure%20why.%20It%20just%20seems%20so%20foreign.%20Growing%20up%20dinner%20was%20mostly%20chicken,%20sometimes%20London%20broil%20and%20occasionally%20other%20cuts%20of%20steak.%20When%20we%20had%20fish%20it%20was%20prepackaged%20fish%20sticks%20or%20frozen%20flounder.%20I%20honestly%20don%E2%80%99t%20even%20remember%20how%20my%20mom%20prepared%20the%20flounder.%20I%20always%20refused%20to%20eat%20it.%20Fish%20was%20just%20gross.%20When%20I%20was%20in%20college,%20I%20started%20to%20come%20around.%20First%20with%20sushi%20(I%20didn%E2%80%99t%20drink%20soda,%20so%20I%20needed%20to%20find%20some%20common%20ground%20to%20help%20me%20fit%20in%20with%20the%20%E2%80%9Ccool%E2%80%9D%20kids),%20then%20moved%20on%20to%20mild%20fishes,%20where%20I%20continue%20to%20hover.%20I%20didn%E2%80%99t%20know%20that%20fresh%20fish%20tasted%20so%20different%20from%20frozen%20fish.%20After%20all,%20fresh%20vs.%20frozen%20meat%20and%20chicken%20doesn%E2%80%99t%20differ%20that%20much%20(most%20of%20my%20meat%20still%20comes%20frozen%20from%20the%20greenmarkets%20or%20farms).%3C/p%3E%3Cp%3EBeing%20tired%20with%20my%20lack%20of%20fish%20education,%20I%E2%80%99ve%20decided%20to%20go%20full%20in.%20Well%20almost.%20I%20have%20no%20intentions%20of%20buying%20a%20whole%20fish%20entirely%20intact%20yet,%20but%20at%20this%20very%20moment%20I%20have%20two%20butterflied%20Bronzino%20fish%20sitting%20in%20my%20refrigerator%20for%20dinner%20tonight.%20Rubbed%20with%20oil%20and%20stuffed%20with%20lemon%20and%20spices%E2%80%93I%E2%80%99ll%20let%20you%20know%20how%20it%20goes.%20Last%20week%20I%20came%20home%20with%20Halibut%20steaks.%20After%20learning%20how%20much%20I%20paid%20(I%20really%20need%20to%20look%20at%20this%20stuff%20in%20advance),%20I%20knew%20I%E2%80%99d%20be%20forced%20to%20do%20something%20spectacular%20with%20them.%20Sometimes%20spectacular%20doesn%E2%80%99t%20need%20to%20be%20fancy%20though.%20Olive%20oil,%20lemon,%20cream%20and%20seasoning%20is%20sometimes%20all%20you%20need.%20And%20surprisingly%20easy.%20Maybe%20fantastic%20fish%20isn%E2%80%99t%20as%20challenging%20as%20I%20thought.%20My%20biggest%20piece%20of%20advice%20for%20this%20recipe?%20Remind%20your%20guests%20of%20the%20giant%20bone%20running%20through%20the%20center%20of%20the%20steaks%20before%20they%20take%20a%20giant%20bite%20(Sorry%20hubby%E2%80%A6).%3C/p%3E%3Cp%3ERinse%20steaks%20and%20pat%20dry.%20Season%20generously%20with%20salt%20and%20pepper,%20then%20sprinkle%20with%20flour.%3C/p%3E%3Cp%3EMelt%20butter%20in%20a%20medium%20skillet%20over%20medium%20high%20heat.%20When%20butter%20starts%20to%20brown,%20add%20fish,%20frying%20on%20each%20side%20for%202-3%20minutes%20(if%20your%20steaks%20are%20really%20thick,%20cover%20skillet%20to%20assure%20fish%20cooks%20through.%20Transfer%20halibut%20to%20a%20large%20plate%20and%20keep%20warm.%3C/p%3E%3Cp%3EReduce%20heat%20to%20medium%20and%20add%20vermouth%20and%20garlic,%20scrapping%20any%20brown%20bits%20from%20the%20pan.%20Stir%20in%20lemon%20juice,%20heavy%20cream%20and%20bring%20to%20a%20boil,%20allowing%20sauce%20to%20thicken%20slightly.%20Season%20with%20additional%20salt%20and%20pepper%20to%20taste.%20Plate%20fish%20and%20spoon%20over%20sauce%20to%20serve.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
